A jerky gun does for ground meat what a caulking gun does for a bead of sealant. You load a seasoned mix into the barrel, squeeze the trigger and lay out even strips or round sticks on a dehydrator tray. It saves the slicing and trimming that whole-muscle jerky needs, and it keeps a batch to the same thickness so it dries evenly.
Barrel size decides how often you reload, and barrel material affects the cleanup. Ground meat also needs more care than sliced strips, so this guide includes what extension food safety sources say about getting it to a safe temperature. Read that part before your first batch.

Quick verdict: the best jerky gun for most home batches
Buy the LEM Jerky Cannon. It holds 1.5 pounds in an anodized aluminum barrel, comes with flat and round stainless nozzles and seasoning, and LEM carries replacement parts. For a smaller, dishwasher-safe option, look at the Presto 08632. For big batches, the SIGVAL Frontier holds over 2.5 pounds, though its maker is much newer to the category.

Our picks for the best jerky gun
Seven picks. LEM and Weston each appear twice because their two models really are different sizes for different buyers. One pick, SIGVAL, is from an Amazon-first brand.
1. LEM Jerky Cannon, 1.5 Pound – Aluminum Barrel, Spare Parts

LEM is a meat-processing equipment maker that serves hunters and home butchers, and this is its larger jerky gun. It holds 1.5 pounds of ground meat in an anodized aluminum barrel, with a heavy-duty piston, stainless rod and coated steel handle. That makes it the most solidly described of the mid-size guns.
It includes flat and round stainless nozzles, Backwoods seasoning packs and a nylon brush. It is not dishwasher safe, so you take it apart and hand wash it. Do that right after the batch, since dried meat is much harder to clean from a barrel.
LEM’s support is a real reason to choose it. It offers a one-year factory warranty and lifetime customer support, and it says it carries parts and accessories for many products. It also lists beef, pork, venison, poultry and mixed game. Our food safety section below has a note on poultry.
Why we like it
- 1.5-pound capacity
- Anodized aluminum barrel and stainless rod
- Flat and round stainless nozzles included
- Seasoning packs and brush in the box
- One-year warranty and parts support, per LEM
Key specifications
| Model | 468 |
|---|---|
| Meat capacity | 1.5 lb |
| Barrel | Anodized aluminum |
| Nozzles | Flat and round, stainless |
| Extras included | Backwoods seasoning, nylon brush |
| Cleaning | Hand wash; disassembles |
| Warranty | 1 year |
| Sold by at our check | Amazon.com |
Why we recommend it
This is the one for someone who makes jerky regularly, from a hunting season’s worth of ground venison to beef for road trips, and wants a tool that can be repaired.
Skip it if you want to put it in the dishwasher. LEM says not to.
Pros and cons
Pros
- Sturdy barrel
- Parts support
- Starter seasoning
Cons
- Hand wash only
- No recipe book included

2. LEM Jerky Gun With Backwoods Seasoning, 3/4 Pound – LEM Support in a Smaller Size

This is LEM’s smaller gun, at 3/4 pound per load. The semi-transparent barrel lets you see how much meat is left. It has a heavy-duty drive system, two nozzles for flat jerky or snack sticks, and a seasoning packet.
The trade-off for the smaller size is reloading. A 2-pound batch means loading three times. That is fine for trying the method out, and small batches are easier to manage in a small dehydrator anyway.
It has the same one-year warranty and customer support as the Cannon. It is also not dishwasher safe; LEM says warm soapy water and quick disassembly.
Why we like it
- See-through barrel
- Same LEM warranty and support
- Flat and stick nozzles
- Seasoning packet included
Key specifications
| Model | 555 |
|---|---|
| Meat capacity | 3/4 lb |
| Barrel | Semi-transparent; material not stated |
| Nozzles | 2, flat and stick |
| Extras included | Backwoods seasoning |
| Cleaning | Hand wash in warm soapy water |
| Warranty | 1 year |
| Sold by at our check | Amazon.com |
Why we recommend it
Good for a first gun, or for someone with a small dehydrator who wants LEM’s support without the larger barrel.
Skip it if you plan to make several pounds at a time. You will reload often.
Pros and cons
Pros
- Shows meat level
- Good parts support
- Smaller to store
Cons
- Frequent reloading
- Hand wash only
3. Presto 08632 Jerky Gun, 1 Pound – Three Nozzles, Dishwasher Safe

Presto is best known for small appliances, including dehydrators, so a gun fits its range. This one holds a pound of seasoned ground meat in a wide, easy-to-load chamber, with a stainless rod. It gives you three nozzles: wide strips, dual strips and round sticks.
The headline for most buyers will be one short line in the listing: dishwasher safe. Neither LEM model allows that. For anyone who has scrubbed fat from a barrel by hand, it is a real advantage.
The listing is otherwise brief. It does not name the barrel material, and the warranty is one year limited. It is a mid-size gun from a long-established appliance maker.
Why we like it
- Dishwasher safe
- Three nozzle shapes
- Wide chamber for easy loading
- Stainless rod
Key specifications
| Model | 08632 |
|---|---|
| Meat capacity | 1 lb |

| Nozzles | 3: wide strips, dual strips, round sticks |
| Extras included | None stated |
| Cleaning | Dishwasher safe |
| Warranty | 1 year limited |
| Sold by at our check | Amazon.com |
Why we recommend it
Choose this if cleanup is what keeps you from making jerky, or if you already own a Presto dehydrator and want one brand to deal with.
Skip it if you want a metal barrel. The listing does not state one.
Pros and cons
Pros
- Easiest cleanup here
- Good nozzle choice
- Known appliance maker
Cons
- Barrel material not stated
- Mid-size capacity

4. Weston Original Beef Jerky Gun Jr. Kit, 1 Pound – Sausage Funnel Included

Weston makes a range of home meat-processing gear, and the Jr. kit is a complete small starter. The plastic tube holds up to a pound, and you get a double-barrel flat jerky nozzle, a double snack stick nozzle, a sausage funnel, a stomper and two cleaning brushes.
Those double nozzles are useful, since you lay down two strips with each pass, which fills a tray faster. The sausage funnel lets you try simple links too, and Weston says you should shape the meat into small balls for faster loading.
The listing does not state care or a warranty. It is a plastic gun, so handle the threads with some care when loading dense meat.
Why we like it
- Double nozzles for two strips at once
- Sausage funnel and stomper included
- Two cleaning brushes
- Clear loading tip from Weston
Key specifications
| Model | 37-0260-W |
|---|---|
| Meat capacity | 1 lb |
| Barrel | Plastic |
| Nozzles | 2: double jerky, double snack stick |
| Extras included | Sausage funnel, stomper, 2 brushes |
| Cleaning | Not stated |
| Warranty | Not stated |
| Sold by at our check | Amazon.com |
Why we recommend it
A good first kit for someone curious about both jerky and sausage, without buying separate tools.
Skip it if you want a metal barrel or a stated warranty.
Pros and cons
Pros
- Complete kit
- Double nozzles
- Sausage option
Cons
- Plastic tube
- No stated warranty
5. Weston Original Jerky Gun, 1.5 Pound – The Bigger Weston Barrel

The Weston Original holds up to 1.5 pounds, the same as the LEM Cannon, with an easy-squeeze trigger, a jerky funnel and stomper and a cleaning brush set. Weston gives it a one-year warranty.
The listing is muddled, so read it carefully. Its features mention both two and four stainless attachments, and the seller at our check was a third party, Buckeye Nation Sales. Confirm what is in the box before you buy.
We keep it because it adds a known maker at this size. If the listing’s vagueness puts you off, the LEM Cannon is the clearer buy.
Why we like it
- 1.5-pound capacity
- Stainless attachments
- Funnel, stomper and brushes
- One-year warranty
Key specifications
| Model | 37-0101-W |
|---|---|
| Meat capacity | 1.5 lb |
| Barrel | Not stated |
| Nozzles | 2 or 4 stainless; listing states both |
| Extras included | Funnel, stomper, brush set |
| Cleaning | Not stated |
| Warranty | 1 year |
| Sold by at our check | Buckeye Nation Sales |
Why we recommend it
Reasonable if you already like Weston gear and want the larger size, once you confirm the nozzle count.
Skip it if you want a clear listing and a seller you recognize. Buy the LEM Cannon.
Pros and cons
Pros
- Larger capacity
- Known maker
- Warranty stated
Cons
- Inconsistent listing
- Third-party seller at our check

6. Nesco BJX-5 Jumbo Jerky Works Kit – From a Dehydrator Maker

Nesco is a well-known home dehydrator brand, and the BJX-5 is its manual press kit. The listing calls it jumbo size with a high-capacity cylinder, and says it comes with flat and round nozzles. It does not give a capacity figure, which we would want before comparing it with the others.
The appeal is simple if you already run a Nesco dehydrator. You can stay with one maker, and the listing describes even strips that dry uniformly in a dehydrator or smoker. It is a hand tool with no motor or heat, and it carries a one-year limited warranty.
The listing is short on materials and cleaning instructions, so this pick rests on the brand and on what the listing states. Our search did not turn up an independent test we could rely on.
Why we like it
- Flat and round nozzles
- From a dehydrator maker
- One-year limited warranty
- Fully manual
Key specifications
| Model | BJX-5 |
|---|---|
| Meat capacity | High capacity; figure not stated |
| Barrel | Not stated |
| Nozzles | Flat and round |
| Extras included | Not stated |
| Cleaning | Not stated |
| Warranty | 1 year limited |
| Sold by at our check | Amazon.com |
Why we recommend it
Sensible for existing Nesco owners who want a press from the same company, or anyone who would rather buy from a dehydrator specialist.
Skip it if you need to know the exact capacity or barrel material. The listing does not say.
Pros and cons
Pros
- Dehydrator specialist
- Two nozzle shapes
- Simple to use
Cons
- No capacity figure
- Few material details
7. SIGVAL Frontier Jerky Gun Kit, 2.5+ Pound – Biggest Barrel, Most Tips

The SIGVAL Frontier is the big one: a 20-inch, 304 stainless tube that holds over 2.5 pounds. It comes with three jerky nozzles (5/8-inch round, 1 1/8-inch double, 1 1/2-inch flat), three sausage tips, a stomper, three brushes and a carrying bag. It also has a padded handle and an adjustable dual-action drive.
If you process a deer’s worth of ground meat in a weekend, fewer reloads will matter. A full 20-inch barrel is heavy to hold and squeeze, though, so it is worth being honest about how much you really make.
SIGVAL is an Amazon-first brand with no warranty stated, and its track record is shorter than LEM’s or Weston’s. It is the only large stainless model we were willing to include, since most other large listings came from brands we could not identify.
Why we like it
- Holds over 2.5 pounds
- 304 stainless tube
- Three jerky nozzles, three sausage tips
- Sizes stated for each nozzle
Key specifications
| Model | Not stated |
|---|---|
| Meat capacity | Over 2.5 lb |
| Barrel | 304 stainless steel, 20 in |
| Nozzles | 3 jerky, 3 sausage |
| Extras included | Stomper, 3 brushes, carrying bag |
| Cleaning | Not stated |
| Warranty | Not stated |
| Sold by at our check | SIGVAL |
Why we recommend it
For someone who regularly works with several pounds of meat and wants fewer trips back to the bowl.
Skip it if you only make a pound or two. A smaller gun is easier to handle and wash.
Pros and cons
Pros
- Largest capacity here
- Stainless tube
- Most nozzle options
Cons
- Amazon-first brand
- No stated warranty

Food safety for ground meat jerky
This matters more than any feature on this page. Ground meat needs a clear safety step. The National Center for Home Food Preservation says an internal temperature of 160°F is necessary to eliminate disease-causing bacteria in ground-meat jerky. Read its jerky page before you start.
A dehydrator on its own is not enough. Penn State Extension says that using the dehydrator alone will inactivate microorganisms but not kill them, and advises checking with an instant-read thermometer that the meat has reached 160°F. Ohio State University Extension gives 160°F for meat and 165°F for poultry, and says to test your dehydrator with a thermometer, since built-in settings may be inaccurate.
Sources differ on some details. Ohio State says a dehydrator must reach a minimum of 145°F to be used safely for jerky, while Penn State and the National Center describe drying at 140°F, so use a dehydrator that can hold the higher figure if you can. The National Center also says raw poultry is generally not recommended for jerky, even though some gun makers list poultry as an option. Penn State suggests ground round, lean or extra-lean ground beef, since fat can turn rancid.
For storage, the National Center says about two weeks at room temperature in a sealed container, and Penn State says one to three weeks depending on the meat, with freezing for longer storage. Ohio State notes that ground-meat jerky uses a dry spice and curing mix. Follow the seasoning maker’s measure exactly. A good meat thermometer is part of this kit.
How to choose a jerky gun
Size it to your batch. Think in pounds per session, not the biggest number. A 1-pound gun needs three loads for 3 pounds. A 2.5-pound barrel saves reloads, but it is more to hold.
Weigh barrel material against cleanup. Aluminum and stainless barrels are sturdy, while plastic is lighter and lets you see the meat level. Check the care line: LEM says hand wash, Presto says dishwasher.
Look at the nozzles. Flat nozzles make strips and round ones make sticks. Double nozzles fill a tray faster. Sausage tips are a bonus if you want to try links.
Check parts and support. Threads, plungers and seals are what wear out. LEM says it carries replacement parts, which is a real advantage over a gun you may have to replace whole.
Match your dehydrator. The tray has to fit the strips, and your dehydrator has to reach a safe heat. Our guide to the best food dehydrator for jerky covers that side.
How we picked these seven jerky guns
We began with what a kitchen would want from the tool: even strips, a barrel that loads cleanly and parts that come apart for washing. We then looked at identifiable makers on Amazon US, confirmed stock and read each listing for capacity, materials and care. We read the National Center for Home Food Preservation, Penn State Extension and Ohio State University Extension directly for the safety section. The USDA’s jerky page would not open for us, so we do not quote it. We searched for independent reviews of these guns and found mostly affiliate lists, none of which we would rely on, so the picks rest on listing and maker details. We checked CPSC recall records by brand and found nothing on these products. We have not used these guns ourselves.
Jerky gun questions, answered
What is a meat jerky shooter?
It is another name for a jerky gun: a hand-held tube with a trigger or plunger that pushes ground meat through a nozzle into strips or sticks, ready for drying.
Can I use any ground meat?
Lean meat works best. Penn State suggests ground round, lean or extra-lean beef because fat can cause rancidity and off flavors. The National Center says raw poultry is generally not recommended for jerky.
Do I need cure in the mix?
Ohio State says ground meat is usually mixed with a dry spice and curing mix instead of a marinade. Use a kit from a known seasoning maker and follow its measure. LEM’s guns include its own seasoning.
Is drying alone enough to make it safe?
No. The extension sources above say a dehydrator alone does not kill bacteria, and they call for an internal temperature of 160°F. Check with a thermometer.
How do I clean a jerky gun?
Take it apart right after the batch and follow the maker’s line. LEM says warm soapy water and no dishwasher. Presto says its gun is dishwasher safe. Most kits include brushes for inside the barrel.
Our final pick for ground meat jerky
The LEM Jerky Cannon is the safest general buy, thanks to its build and parts support. Pair it with a good dehydrator from our jerky dehydrator guide and a thermometer. If you are grinding your own, see our electric meat grinder guide. If your plans change and you would rather have someone else cook, the menu at Julia’s is a call away: call to order.
