Racks, Cones or Cast Iron? Best Roasting Pan Chicken Picks

Chicken-sized roasting pans with racks, vertical and beer-can roasters, and cast iron pans for one whole bird, plus the USDA 165°F doneness rule.

A whole seasoned roast chicken in a black pan with carrots and broccoli
A whole roast chicken in a dark pan with vegetables alongside.

A whole chicken is a different job from a holiday turkey. A three- to five-pound bird gets lost in a 16-inch roasting pan: the drippings spread thin and scorch, and the pan takes up the whole oven. What a chicken wants is a smaller pan with a rack, an upright roaster that lets heat reach every side, or a heavy cast iron pan that browns the bottom and the vegetables underneath. Pollo asado on a Sunday, a chicken for tinga or enchiladas, or a bird for the week’s tacos all start the same way.

This guide is about those chicken-sized tools. Our main guide to the best roasting pan covers the big clad pans built for turkeys and large roasts; here we picked pans and roasters for one bird, and none of the products repeat that guide or our rack, turkey and vegetable roasting guides. Specifications come from the makers and the Amazon listings, and doneness guidance comes from the USDA.

Quick verdict: which chicken roasting pan to buy

For most kitchens, buy the OXO Obsidian Carbon Steel 15 x 10.5-inch Roasting Pan with Rack: a chicken-sized pan with a stainless rack, oven safe to 660°F and usable on any stove, induction included, for the pan sauce. For an upright bird, the Nordic Ware Naturals Vertical Chicken Roaster is a simple aluminum pan with a built-in cone, made in the USA.

The table lines up five picks, one per kind of cook. Eight are covered in full after it: three pans with racks, three vertical roasters and two cast iron pans.

Our best roasting pan chicken picks

There are three ways to roast a whole chicken, and each has its own tool. A small pan with a rack lifts the bird so the bottom browns and the drippings collect for gravy. A vertical roaster stands the bird up on a cone or stand so hot air reaches every side. A cast iron pan holds heat and browns whatever sits on it, including a spatchcocked bird laid flat. Whatever you choose, the USDA’s Food Safety and Inspection Service says a whole chicken is done when it reaches 165°F, measured with a food thermometer, not judged by color.

Small roasting pans with a rack

These three pans are sized for one or two chickens rather than a turkey. Each comes with its own rack, so there is nothing else to buy.

1. OXO Obsidian Carbon Steel 15 x 10.5-inch Roasting Pan with Rack – Chicken-Sized, Stove-Ready

Best overallOXO Obsidian Pre-Seasoned Carbon Steel

OXO’s Obsidian roaster is the size a chicken wants: 15 x 10.5 inches, per the listing, which is enough for a four- or five-pound bird with potatoes and onions around it, without the empty space of a turkey pan. It is made of carbon steel, which behaves much like cast iron but weighs less, and OXO sells it pre-seasoned so it can be used right away. The seasoning builds into a natural nonstick surface with use, OXO says.

The rack is stainless steel and lifts the bird so the skin underneath browns. What makes this our top pick is what happens afterward. The listing says the pan works on all stovetops, induction included, and is oven safe to 660°F, so once the chicken comes off to rest the pan goes on a burner, and the drippings become a pan sauce or the base for a salsa for the shredded meat. OXO also markets it for the grill.

Carbon steel asks for some care. OXO says to hand wash it to protect the seasoning, and like cast iron it can rust if left wet.

Why we like it

  • 15 x 10.5 inches, sized for one bird
  • Oven safe to 660°F, per the listing
  • Works on induction and every other stove
  • Pre-seasoned; stainless rack included

Key specifications

Model CC005106-001
Type Roasting pan with rack
Material Pre-seasoned carbon steel; stainless rack
Size 15 x 10.5 in
Rack or stand Stainless steel roasting rack
Oven-safe to 660°F
Stovetop use All stovetops, including induction
Care Hand wash only

Why we recommend it

It suits the cook who roasts a chicken most weeks and wants one pan that browns the bird, holds the vegetables and then makes the sauce on the stove.

Skip it if you want a pan you can put in the dishwasher; carbon steel is hand wash only.

Pros and cons

Pros

  • Right size for a whole chicken
  • Very high oven limit
  • Goes from oven to burner

Cons

  • Needs drying and oiling like cast iron
  • Not dishwasher safe
  • Can rust if left wet

2. Cuisinart Chef’s Classic 14-inch Stainless Pan with Roasting Rack – Bare Steel for a Single Bird

Best stainlessCuisinart 7117-14RR 14-Inch Chef's-Classic Cookware-Collection

Cuisinart sells this as a lasagna pan with a stainless roasting rack, and that double life is exactly why it works for chicken. The inside of the pan measures 14.2 x 9.6 inches and 2.8 inches deep, per the listing, with outside dimensions of 17.8 x 10.2 inches including the handles. That fits a standard home oven with room for a sheet of vegetables beside it, and the rack lifts a whole chicken off the floor of the pan.

It is the smaller sibling of the 16-inch Chef’s Classic roaster in our roasting rack guide, and we include it for that reason: the same stainless build in a size that suits one bird. Cuisinart describes an aluminum-encapsulated base that heats quickly and spreads heat evenly, solid stainless riveted handles, a mirror finish and a limited lifetime warranty. Pan and rack are dishwasher safe.

One caveat: Cuisinart’s own page does not give an oven temperature limit for this pan, so we list it as not stated. The listing says the handles stay cool on the stovetop but does not list which burners the pan suits, so check before you put it on induction.

Why we like it

  • Bare stainless pan and rack
  • Aluminum-encapsulated base, per Cuisinart
  • Dishwasher safe
  • Doubles as a lasagna pan

Key specifications

Model 7117-14RR
Type Roasting/lasagna pan with rack
Material Stainless steel, aluminum-encapsulated base
Size 14.2 x 9.6 x 2.8 in inside; 17.8 in with handles
Rack or stand Stainless roasting rack
Oven-safe to Not stated by Cuisinart
Stovetop use Burner types not stated
Care Dishwasher safe

Why we recommend it

It suits a cook who prefers uncoated stainless, wants the dishwasher option and will use the pan for lasagna and enchiladas as often as for chicken.

Skip it if you need a stated oven limit; Cuisinart does not give one for this model.

Pros and cons

Pros

  • No coating to wear out
  • Two jobs in one pan
  • Limited lifetime warranty

Cons

  • Oven limit not stated
  • Sold as a lasagna pan, not a dedicated roaster
  • Handles add almost 4 inches to the length

3. Chicago Metallic 13.5 x 9.5-inch Roasting Pan with Rack – Small, Coated and Simple

Best budgetChicago Metallic Roasting Pan with Rack - 9.5 Inch

Chicago Metallic is a long-running bakeware maker, and this is its small roaster: a carbon steel pan measuring 13.5 x 9.5 x 2.25 inches rim to rim, with an inner cooking surface of 12.75 x 9.875 inches, per the listing. Chicago Metallic says it fits most home ovens and holds a whole chicken, a small roast or a casserole.

The rack is flat, with handles that fold out to lift it, and both pan and rack have a nonstick coating inside and out. The listing names the coating and says the pan is dishwasher, oven and metal-utensil safe. It gives the steel gauge as 0.4 mm, which is light; a thin pan heats fast but can scorch drippings, so add a splash of water or broth to the pan if it looks dry.

A note on the listing: it names a Xynflon coating and also calls it PTFE free, and we could not reconcile those from the maker’s information, so we describe it only as nonstick. Chicago Metallic backs the pan with a 25-year limited warranty, per the listing. It is an oven pan; the listing does not mention stovetop use.

Why we like it

  • Sized for a whole chicken, per the maker
  • Flat rack with fold-out handles
  • Dishwasher safe
  • 25-year limited warranty

Key specifications

Model 16947
Type Roasting pan with rack
Material Nonstick-coated carbon steel
Size 13.5 x 9.5 x 2.25 in
Rack or stand Flat nonstick rack, fold-out handles
Oven-safe to Not stated
Stovetop use Not stated
Care Dishwasher safe

Why we recommend it

It suits a small household or a small oven, and anyone who wants a coated pan that cleans up in minutes.

Skip it if you make gravy on the stove; this is a light oven pan.

Pros and cons

Pros

  • Compact and light
  • Easy release and cleanup
  • Long warranty

Cons

  • Thin 0.4 mm steel
  • Coating details unclear on the listing
  • Oven limit not stated

Vertical and beer-can roasters

An upright chicken roasts with air on every side, and the fat runs down to the pan instead of pooling around the thighs. These three stand the bird up in different ways.

4. Nordic Ware Naturals Vertical Chicken Roaster – Cone and Pan in One

Best vertical roasterNordic Ware Naturals Vertical Chicken Roaster

Nordic Ware’s vertical roaster is a round, 9.8-inch pan of pure aluminum with a cone built into the middle, per the maker. You brush the cone and the base with butter or oil, scatter vegetables around it and lower the chicken onto the cone. The vegetables cook in the drippings, so dinner comes out of one pan.

Nordic Ware’s directions say to roast at 425°F until the chicken reaches 165°F inside, which matches the USDA’s safe minimum for poultry. The maker rates it for the oven or the grill up to 500°F, recommends hand washing to protect the aluminum, and gives it a five-year warranty. The listing says it is made in America of domestic and imported materials.

Because the cone is fixed, the pan does not double as anything else, and a very large bird may be top-heavy on a 9.8-inch base. For a standard grocery-store chicken, though, it is the simplest way to roast upright.

Why we like it

  • Cone and drip pan in one piece
  • Oven or grill to 500°F, per Nordic Ware
  • Made in the USA, per the listing
  • Five-year warranty

Key specifications

Model 36507
Type Vertical roaster with pan
Material Pure aluminum
Size 9.8 in round
Rack or stand Built-in cone
Oven-safe to 500°F
Stovetop use Not stated; oven and grill
Care Hand wash recommended

Why we recommend it

It suits the cook who wants crisp skin all round and a one-pan chicken-and-vegetable dinner, in the oven or on the grill.

Skip it if you roast very large birds; the base is under 10 inches across.

Pros and cons

Pros

  • Vegetables cook in the drippings
  • Light aluminum
  • Clear directions from the maker

Cons

  • Single-purpose pan
  • Hand wash recommended
  • Small base for a big bird

5. Made In Pollo Plug Vertical Chicken Roaster – Turns Your Skillet Into a Roaster

Best skillet insertMade In Cookware - Pollo Plug Vertical Chicken Roaster - Stainless Steel - Dishwasher Safe

If you already own a good cast iron skillet or Dutch oven, Made In’s Pollo Plug turns it into a vertical roaster. It is a single piece of uncoated 304 stainless steel, 9.38 inches tall, standing on three legs that form a tripod inside the pan, per the listing. The chicken sits upright on it, and the pan underneath catches the fat and browns whatever vegetables you add.

Made In rates it oven safe to 800°F, well beyond what a home oven reaches, and says it fits its own 10- and 12-inch cast iron skillets, braiser, Dutch oven and enameled cast iron. Other heavy skillets of a similar size are likely to work, but measure first. It weighs 1.6 pounds and goes in the dishwasher, which makes it the easiest of the vertical roasters here to clean.

Because there is no coating, there is nothing to flake off, which Made In points out. The catch is that you need the pan: on its own, the Pollo Plug has nowhere for the drippings to go. Pair it with a cast iron skillet and you have one of the most versatile chicken setups on this page.

Why we like it

  • Uncoated 304 stainless, one piece
  • Oven safe to 800°F
  • Tripod base sits inside a skillet
  • Dishwasher safe, 1.6 lb

Key specifications

Model ACC-CHICKEN-ROAST
Type Vertical roaster insert
Material 304 stainless steel, no coating
Size 9.38 in tall
Rack or stand Three-leg tripod stand
Oven-safe to 800°F
Stovetop use Not applicable; use in your pan
Care Dishwasher safe

Why we recommend it

It suits the cook who already owns a 10- or 12-inch skillet or a Dutch oven and wants to roast upright without buying another pan.

Skip it if you do not have a heavy pan to stand it in; it is only half of the setup.

Pros and cons

Pros

  • Works with pans you own
  • No coating
  • Stores small

Cons

  • Needs a separate pan
  • Tall bird plus stand needs oven headroom
  • Single-purpose tool

6. Mr. Bar-B-Q Stainless Beer Can Chicken Roaster – For the Grill or Oven

Best for the grillMr. Bar-B-Q 06126Y Beer Chicken Roaster

Beer can chicken is a grilling classic, and Mr. Bar-B-Q’s stand is the simplest way to do it. The stainless steel stand holds a can of liquid in the center, the chicken sits over it, and four legs reach out to the corners to keep the bird upright, per the listing. It works on the grill or in the oven.

The appeal is the same as any vertical roaster: the bird cooks upright with the legs at the bottom and the breast at the top, which the listing says lets the breast cook more slowly, and the skin crisps all round. Use it over a drip pan or a sheet of foil in the oven, because the stand itself has no pan to catch the fat. Any liquid works in the can; broth, citrus juice or water are all used.

The listing calls it dishwasher safe in one line and says to hand wash in another, so hand washing is the safe choice. It is a small accessory rather than a pan, and its value is that it lets a covered grill act as an oven for a whole chicken.

Why we like it

  • Stainless steel stand, per the listing
  • Four legs for stability
  • Grill or oven use
  • Small to store

Key specifications

Model 06126X / 06126Y
Type Beer can chicken stand
Material Stainless steel
Size Standard (dimensions not stated)
Rack or stand Four-leg stand with can holder
Oven-safe to Not stated; grill and oven use
Stovetop use Not applicable
Care Hand wash (listing also says dishwasher safe)

Why we recommend it

It suits the backyard cook who wants to roast a whole chicken on a covered grill and keep the kitchen cool in a Houston summer.

Skip it if you want a pan for drippings and gravy; this is a stand only.

Pros and cons

Pros

  • Small and simple
  • Stable four-leg base
  • Grill or oven

Cons

  • No drip pan
  • Dimensions not stated
  • Contradictory care notes on the listing

Cast iron chicken roasters

Cast iron holds heat like nothing else, so the bottom of the bird and the vegetables under it brown deeply. These two are heavy, bare cast iron, with no enamel or coating.

7. Petromax Cast Iron Poultry Roaster – Upright Bird, Herbs in the Well

Best cast ironPetromax Dutch Oven 12779 Beer Can Chicken Poley Roaster

Petromax, the German outdoor cookware maker, builds this roaster as a round cast iron pan with a raised center. The chicken sits upright over the middle, and a well in the center holds herbs, spices or broth that flavor the bird from inside as it roasts, per Petromax. A drip tray around it catches fat and juices, and side spouts let you pour them off.

Petromax gives the size as 36 x 32 cm with handles, about 14.2 x 12.6 inches, and 10 cm tall, with a top diameter of 30 cm, and the weight as about 4.4 kg, or roughly 9.7 pounds. The Amazon listing gives a similar size and a weight of about 8.8 pounds. It comes pre-seasoned, so it can be used straight away, and Petromax says it can go in the oven if it fits or on a grill; retailers add hot coals.

Because it is bare cast iron, there is no stated temperature limit to worry about, but it needs the usual cast iron care: wash, dry right away and oil lightly. Measure your oven before buying; with a chicken standing on it, the roaster is tall.

Why we like it

  • Center well for herbs or broth
  • Drip tray with pouring spouts
  • Pre-seasoned cast iron, no coating
  • Oven or grill, per Petromax

Key specifications

Model 12779 (Petromax CF30)
Type Vertical poultry roaster
Material Pre-seasoned cast iron
Size 36 x 32 x 10 cm with handles (about 14.2 x 12.6 x 3.9 in)
Rack or stand Raised center with herb well
Oven-safe to Not stated; bare cast iron
Stovetop use Not stated; oven and grill
Care Hand wash, dry, oil

Why we recommend it

It suits the cook who roasts on a grill or over coals as often as in the oven and wants an upright roaster that will last decades.

Skip it if lifting about nine pounds of hot iron is a problem.

Pros and cons

Pros

  • Flavor well in the center
  • Spouts for pouring off fat
  • No coating

Cons

  • Heavy
  • Tall once loaded
  • Needs cast iron care

8. Lodge Seasoned Cast Iron Baking Pan, 15.5 x 10.5-inch – Flat Pan for a Spatchcocked Bird

Best for spatchcockLodge Pre-Seasoned Cast Iron Baking Pan

Spatchcocking, cutting out the backbone and pressing the chicken flat, is the fastest way to roast a whole bird, and it needs a wide, shallow pan rather than a deep roaster. Lodge’s rectangular cast iron baking pan is that pan. Lodge gives the cooking area as about 15.5 x 10.5 inches and the depth as 1.5 inches, and KaTom lists the overall length with handles at a little over 19 inches.

The low sides let hot air reach the skin, and the cast iron sears the underside. Lodge says it is built for high-heat roasting and baking and seasoned with only iron and vegetable oil, and the listing says it is made in the USA. A flat chicken with sliced onions and potatoes under it fits comfortably, and the drippings can be spooned over the bird or poured off for a sauce.

We include a Lodge cast iron pan here even though our vegetable roasting guide picks Lodge’s smaller 9 x 13-inch casserole, because this is a different, larger and shallower pan that suits a flattened bird. Retailers give conflicting weights for it, but expect a heavy pan, and there is no rack.

Why we like it

  • About 15.5 x 10.5 in, 1.5 in deep, per Lodge
  • Bare cast iron, PFAS free, per Lodge
  • Built for high-heat roasting
  • Made in the USA

Key specifications

Model BW15BP
Type Rectangular baking and roasting pan
Material Seasoned cast iron
Size About 15.5 x 10.5 x 1.5 in inside; about 19 in long with handles
Rack or stand None
Oven-safe to Not stated; built for high heat
Stovetop use Not stated on the listing
Care Hand wash, dry, oil

Why we recommend it

It suits the cook who spatchcocks for speed and crisp skin, and who will use the same pan for pizza, cornbread and roasted vegetables.

Skip it if you want to roast a whole upright bird; the sides are only 1.5 inches high and there is no rack.

Pros and cons

Pros

  • Deep browning from cast iron
  • Many uses beyond chicken
  • Made in the USA

Cons

  • Heavy; weight figures vary between retailers
  • No rack
  • Low sides can let fat splash

How to choose a roasting pan for chicken

A good chicken roaster is mostly about size and airflow. These are the points a kitchen weighs.

1. Size the pan to the bird

A typical whole chicken fits a pan of roughly 13 x 9 to 15 x 11 inches with a little room for vegetables. Much larger and the drippings spread thin and burn; much smaller and the bird steams against the sides. The turkey-sized pans in our best roasting pan for turkey guide are overkill for one chicken.

2. Rack, cone or flat

A rack lifts the bird so the underside browns. A vertical roaster stands it up so heat reaches every side and fat runs off. A flat pan suits a spatchcocked bird, which cooks fastest of all. For more on racks themselves, see our roasting pan rack guide.

3. Material

Carbon steel and cast iron brown hardest and can go on a burner for sauce, but need drying and oiling. Stainless with an aluminum base is the easy-care middle ground. Nonstick-coated pans release cleanly but are best kept to moderate oven heat and away from the broiler.

4. Oven headroom

Vertical roasters add height. A chicken standing on a 9-inch stand inside a skillet can be well over a foot tall, so check the space between your oven rack and the top element before you buy, and move the rack down a level.

5. Doneness is a number

FSIS says whole poultry is safe at 165°F, checked with a food thermometer in the innermost part of the thigh and wing and the thickest part of the breast. FSIS says color is not a reliable sign. An instant-read meat thermometer is the one tool every chicken roaster needs.

A roasting pan on the stove, with the juices ready to spoon off.

How we chose these eight

We looked for pans and roasters sized for a whole chicken rather than a turkey, and for one of each style: pans with racks, vertical roasters and cast iron. We used the makers’ own descriptions and the Amazon listings for specifications, Nordic Ware’s, Petromax’s and Lodge’s product pages for size and use, and food-service dealer listings where a maker’s page left a gap. Doneness guidance comes from the USDA’s Food Safety and Inspection Service.

None of these products appears in our main roasting pan guide or in our rack, turkey or vegetable roasting guides. We searched the Consumer Product Safety Commission’s recall list for every brand here and found no recall for these products. Every pick was in stock on Amazon when this guide was written. We have not cooked with these pans ourselves; where a listing is unclear or contradicts itself, we say so.

Chicken roaster questions, answered

What is the best roasting pan for chicken?

For most kitchens, the OXO Obsidian carbon steel roaster: it is sized for one bird, comes with a stainless rack, is rated to 660°F and works on any stovetop for the pan sauce. If you prefer stainless that goes in the dishwasher, the Cuisinart 14-inch pan with rack is the alternative.

Do I need a rack to roast a chicken?

No, but it helps the underside brown. Without one, a bed of thick-sliced onions, carrots or potatoes lifts the bird a little and flavors the drippings. A vertical roaster does the same job by standing the bird up.

Is a vertical roaster better than a pan?

It is different. A vertical roaster exposes all the skin to heat and lets fat drain away, which gives crisp skin all round. A pan with a rack collects more drippings for gravy and handles a bed of vegetables more easily.

What temperature should a whole chicken reach?

165°F, according to the USDA’s Food Safety and Inspection Service, checked with a food thermometer in the thigh, the wing joint and the thickest part of the breast. FSIS advises against relying on color.

Can I roast a chicken in a cast iron skillet?

Yes. A 12-inch skillet holds a typical chicken, and a stand like the Made In Pollo Plug turns it into a vertical roaster. For skillet picks, see our guide to the best cast iron skillet.

Roasting your next chicken

For a pan that roasts one bird and then makes the sauce, the OXO Obsidian is our pick. If you like the bird upright, the Nordic Ware roaster or a Pollo Plug in your skillet does it simply, and the Petromax brings the same idea to the grill. For bigger roasts, go back to our guide to the best roasting pan, and for the vegetables that go alongside, see the best roasting pan for vegetables.
