Stainless, Chrome or Nonstick? The Best Baking Pan and Rack

Sheet pan and wire rack sets compared by pan and rack material, fit and heat limit, with what America's Test Kitchen found about pans and racks.

Rows of golden cookies cooling on a footed wire rack on a kitchen counter
Cookies cooling on a wire rack, raised so steam escapes from below.

A sheet pan with a wire rack set inside it is one of the most useful pieces of equipment in any kitchen, and one of the least glamorous. Raised on a rack, chicken wings and bacon crisp on all sides because hot air moves underneath them and the fat drips away. Breaded cutlets and chiles rellenos stay crunchy while they wait. Cookies and cakes cool without going soggy on the bottom. Take the rack out and you still have a sheet pan for roasting vegetables.

Restaurant kitchens keep stacks of sheet pans and racks for exactly these jobs: holding fried food, resting grilled meat, cooling trays from the oven. The pair only works, though, if the rack fits the pan, stands up to oven heat and does not sag in the middle. This guide looks at matched pan-and-rack sets with that in mind, using each maker’s stated materials and what America’s Test Kitchen found when it tested rimmed baking sheets and wire racks.

Quick verdict: which sheet pan and rack set to buy

For most kitchens the best baking pan and rack is the Ultra Cuisine Aluminum Half Sheet Pan with Stainless Steel Rack: an uncoated aluminum half sheet with a steel-reinforced rim and a matching rack that Ultra Cuisine says is 304 stainless steel, the same pairing of bare aluminum pan and stainless rack that America’s Test Kitchen favors. For acidic food and the broiler, the Hestan OvenBond Tri-Ply Half Sheet Pan with Rack is the stainless pick, rated to 600°F. If you want easy release, the USA Pan Half Sheet and Bakeable Rack Set is the nonstick choice, and for small batches the Nordic Ware Naturals Quarter Sheet with Oven Rack is rated to 500°F and for broiling.

The table compares the five sets we would point most cooks to first. All eight picks are reviewed in full below it.

What a pan and rack actually do together

On its own, a rimmed sheet pan holds food flat against hot metal. That is what you want for roasted vegetables, but not for anything you want crisp all over. Food sitting on the pan fries in its own fat on the bottom and steams where it traps moisture. Set a wire rack inside the pan and the food sits in moving hot air instead: the underside browns, fat and juices drip into the pan, and nothing needs turning.

The same rack does a second job out of the oven. Cookies, cakes and breads cool faster and stay crisp underneath on a rack because steam can escape from below. Fried or breaded food stays crunchy on a rack instead of going soft on a plate or paper towel. And for glazing, icing or dusting with sugar, the pan underneath catches the drips.

Why matched sets are worth it

America’s Test Kitchen warns that some sheet pans will not hold a standard rack well, and that stainless pans in particular often need the maker’s own rack. A rack that slides around a pan is a burn risk when you carry it full of hot fat; one that sits too high lets food roll off; one that sits too low leaves little room for drippings. Buying the pan and rack together, from a maker that sizes one to the other, avoids all three.

Our picks for the best baking pan and rack

These eight picks cover the main ways to buy a pan with a rack: bare aluminum with stainless, clad stainless, nonstick, a crisping tray, a small quarter-sheet set, a budget set with two pans, an all-stainless pair, and a rack on its own for the pan you already have. Each lists the same eight specifications, taken from the maker or the Amazon listing.

1. Ultra Cuisine Aluminum Half Sheet Pan with Stainless Steel Rack – Bare Pan, Stainless Rack

Best overallAluminum Baking Sheet with Cooling Rack Set

Ultra Cuisine’s set pairs the two things a working kitchen wants: an uncoated aluminum half sheet and a rack with no coating to worry about. The pan measures 17.9 x 12.9 x 1.3 inches outside and 17.08 x 12.4 inches inside, close to the standard half sheet, with a reinforced steel rim that Ultra Cuisine says resists warping. The rack is 16.5 x 11.5 x 1 inch and, per the maker, 100 percent 304 stainless steel rather than chrome-plated wire.

That combination matches what America’s Test Kitchen recommends. Its sheet pan review makes bare aluminum the default for even browning, and its wire rack testing focused on plain or chrome-coated stainless racks, leaving out nonstick racks because they would not be safe under the broiler. A bare pan and a stainless rack can roast wings on Tuesday, cool tortilla chips or cookies on Wednesday, and hold breaded fish on Friday.

Care is split. Ultra Cuisine says the rack can go in the dishwasher but the pan should be hand washed; if the pan does go in the dishwasher, the maker says the discoloration is cosmetic. The listing does not state a maximum oven temperature for either piece. It also calls this a value pack, so check the listing for how many pans and racks are in the box.

Why we like it

  • Uncoated aluminum pan for even browning
  • Rack is 304 stainless steel, per Ultra Cuisine
  • Reinforced steel rim resists warping
  • Rack is dishwasher safe

Key specifications

Model RWP-165-115
Type Half sheet pan with fitted rack

Material Aluminum pan, reinforced steel rim
Coating None
Rack 304 stainless steel, per Ultra Cuisine
Oven-safe to Oven safe; maximum not stated
Dishwasher safe Rack yes; hand wash the pan

Why we recommend it

It suits the cook who wants one all-purpose pan and rack for roasting, crisping and cooling, with nothing that can flake or wear off.

Skip it if you want both pieces to go in the dishwasher; the pan should be washed by hand.

Pros and cons

Pros

  • Bare aluminum browns evenly

2. Hestan OvenBond Tri-Ply Half Sheet Pan with Rack – Clad Stainless, Broiler-Ready

Best stainlessOvenBond® 13" x 18" Tri-ply Clad Stainless Steel Half Sheet Pan with Rack

Hestan’s OvenBond half sheet is built like clad cookware: 18/10 stainless steel bonded around an aluminum core, which the listing says spreads heat more evenly than a single sheet of steel. It comes with a stainless steel rack, and the pan has wide, curved handles that Hestan says are designed for a firm hold when you take it out of the oven. Hestan’s product page rates the pan and rack oven and broiler safe to 600°F, the highest rating in this guide.

Stainless is the answer for acidic food. America’s Test Kitchen notes that stainless cooking surfaces do not react with acids, so this is the pan for roasting tomatoes and tomatillos for salsa, chicken in a citrus marinade, or anything finished with vinegar. ATK also found that clad stainless sheets weigh more than aluminum and that stainless pans often need the maker’s own rack, which is the point of buying this as a set.

The listing gives the size as 13 x 18 inches, and Hestan says the half sheet is sized to fit 30-inch ovens. The listing adds that the pan is thermal tested and engineered to resist warping. Retailers disagree on whether the set can go in the dishwasher, so follow the care label that comes with it.

Why we like it

  • Oven and broiler safe to 600°F, per Hestan
  • Stainless surface does not react with acids
  • Wide handles for gripping with mitts
  • Stainless rack made to fit the pan

Key specifications

Model 50249

Material Tri-ply 18/10 stainless steel, aluminum core
Coating None; brushed stainless surface
Rack Stainless steel
Oven-safe to 600°F, oven and broiler (Hestan)
Dishwasher safe Check the care label

Why we recommend it

It suits the cook who broils often, roasts acidic food on a sheet pan, and wants a pan built to resist warping.

Skip it if weight matters; clad stainless sheets are heavier than aluminum ones, per ATK.

Pros and cons

Pros

  • Highest heat rating here
  • Non-reactive surface
  • Stainless rack included

Cons

  • Dishwasher advice varies by retailer
  • Country of manufacture not stated
  • Heavier than aluminum

3. USA Pan Half Sheet and Bakeable Nonstick Rack Set – Coated Pan, Coated Rack

Best nonstick setUSA Pan Bakeware Half Sheet Baking Pan and Bakeable Nonstick and Cooling Rack Set

USA Pan’s set pairs its half sheet with a rack made to go in the oven with it. The pan is heavy-gauge aluminized steel with USA Pan’s corrugated surface, which the maker says helps air flow for quick release and even baking, and both pieces carry Americoat, a silicone nonstick coating that USA Pan describes as PTFE, PFOA and BPA free. The pan’s baking area is 17.25 x 12.25 x 1 inches; the crosswire rack is 16.75 x 11.5 x 0.5 inches on six raised feet.

USA Pan’s nonstick half sheet, sold on its own, is the top pick in America’s Test Kitchen’s nonstick baking sheet review, which praised its even browning and easy release; this set pairs a half sheet of the same stated size with the rack. Both pieces are oven safe to 450°F, per the listing, and USA Pan’s care page says not to exceed 450°F because higher heat could compromise the coating. That makes it a baking and roasting set, not a broiling set.

Treat the coating gently. USA Pan says to wash with hot water, mild soap and a gentle sponge, to use silicone, nylon or wooden tools, and not to use cooking spray, which can stain the coating. ATK also cautions that racks and metal tools can scratch nonstick sheets, so set the rack in carefully and do not slide it around. The pan is made in the USA; the rack is imported.

Why we like it

  • USA Pan’s nonstick half sheet won ATK’s nonstick review
  • Rack is made to bake in the oven, per USA Pan
  • Silicone nonstick coating on both pieces
  • Pan made in the USA

Key specifications

Model 1606CR
Type Half sheet pan with bakeable rack
Size Pan 17.75 x 12.75 x 1 in outside; rack 16.75 x 11.5 x 0.5 in
Material Heavy-gauge aluminized steel
Coating Americoat silicone nonstick
Rack Nonstick-coated aluminized steel, crosswire, six feet
Oven-safe to 450°F (pan and rack)
Dishwasher safe Hand wash with mild soap, per the listing

Why we recommend it

It suits the baker who wants sticky things, from glazed wings to caramel, to release cleanly from both pan and rack.

Skip it if you broil on a rack; the coating is rated only to 450°F, and ATK leaves nonstick racks out from under the broiler.

Pros and cons

Pros

  • Easy release on both pieces
  • Strong maker reputation in ATK’s review
  • Rack on six feet for stability

Cons

  • 450°F limit, no broiler
  • Hand wash, no cooking spray
  • Coating can scratch

4. Nordic Ware Extra Large Oven Crisp Tray with Rack – Crisp Without Turning

Best for crispingNordic Ware Extra Large Oven Crisping Baking Tray

Nordic Ware sells this pair as an oven crisping tray, and the idea is simple: an aluminum pan catches the drippings while a nonstick-coated carbon steel rack holds food up in the hot air, so wings, bacon, fries, jerky and roasted vegetables crisp without turning. This is the big version: the pan measures 21 x 15 x 2 inches, larger than a half sheet, and Nordic Ware tells you to check your oven before you buy.

The aluminum pan heats quickly and evenly, and the set is made in America of domestic and imported materials. For a Mexican kitchen it is a useful way to crisp chicken for tacos or flautas without a fryer, or to dry-roast a batch of chiles de árbol and pepitas without them sitting in oil.

The listing rates the tray heat safe up to 400°F. It gives no wash instructions, but Nordic Ware says its half-sheet version of this tray is hand wash only, and warns there that aluminum reacts with acidic ingredients such as vinegar and tomato products, which can darken, pit or corrode the pan over time. Treat this one the same way. That half-sheet version was out of stock when we checked.

Why we like it

  • Rack raises food so it crisps without turning
  • Aluminum pan heats quickly and evenly
  • Made in America, per the listing
  • Extra-large pan for big batches

Key specifications

Model 35702AMZM
Type Crisping tray with fitted rack
Size Pan 21 x 15 x 2 in; 21.1 x 15.8 x 2.3 in with rack
Material Aluminum pan
Coating Pan uncoated; rack nonstick coated
Rack Nonstick-coated carbon steel
Oven-safe to 400°F (listing)
Dishwasher safe Not stated; half-sheet version is hand wash only

Why we recommend it

It suits the cook who wants oven-crisp wings, bacon and fries and would rather not buy an air fryer.

Skip it if you want a broiler-safe rack or have a small oven; the rack is nonstick coated, the limit is 400°F and the pan is 21 inches long.

Pros and cons

Pros

  • Built for crisping
  • Rack fits the pan
  • Holds a big batch

Cons

  • 400°F limit
  • Too big for some ovens
  • Reacts with acidic food

5. Nordic Ware Naturals Quarter Sheet with Oven Rack – Small, Uncoated, Broiler-Safe

Best small setNordic Ware Naturals Quarter Sheet with Multi-Purpose Oven and Cooling Rack

For one or two people, a half sheet is often more pan than the food needs. This set pairs Nordic Ware’s Naturals quarter sheet with a matching rack, and both are uncoated aluminum, so there is no coating to protect. Nordic Ware rates the set for the oven to 500°F and for broiling, which a nonstick rack cannot match.

The rack has diagonal stiffening ribs across the grid to keep it from sagging, cut-out corners for lifting it out of the pan, and a grid tight enough to hold small pieces. That suits a few chicken thighs, a handful of jalapeños for the broiler, or reheating leftovers so they crisp instead of going soggy. It is the same quarter sheet we recommend on its own in our guide to roasting vegetables, here with a rack made to fit it; Nordic Ware lists that pan at 12.9 x 9.6 inches outside.

The listing does not say whether the set is dishwasher safe. Nordic Ware’s Naturals pans are generally hand-wash items, since dishwasher detergent discolors bare aluminum, and like all bare aluminum they are best kept away from long contact with acidic food.

Why we like it

  • Oven safe to 500°F and broiler safe, per Nordic Ware
  • Uncoated pan and rack
  • Stiffening ribs and lift-out corners on the rack
  • Made in America, per the listing

Key specifications

Model 45330
Type Quarter sheet with fitted rack
Size Quarter sheet (12.9 x 9.6 in pan, per Nordic Ware’s quarter-sheet listing)
Material Aluminum
Coating None
Rack Uncoated aluminum, ribbed grid
Oven-safe to 500°F; broiler safe
Dishwasher safe Not stated

Why we recommend it

It suits small households and toaster-oven cooks who want a rack that can go under the broiler.

Skip it if you cook for a family; the quarter sheet holds a side, not a dinner.

Pros and cons

Pros

  • Broiler safe
  • No coating to wear
  • Compact

Cons

  • Small capacity
  • Dishwasher use not stated
  • Reacts with acidic food

6. Chicago Metallic Jelly Roll Pan Set with Cooling Rack – Two Pans, One Rack

Best two-pan setChicago Metallic Jelly Roll Pan Set with Cooling Rack

Chicago Metallic’s set gives you two nonstick jelly roll pans, each 17 x 12.25 inches, and one chrome wire cooling rack. Two pans make it easy to keep one for roasting and one for baking, or to run two trays of cookies at once while the rack cools the first batch. The pans are heavy-gauge steel that the maker says holds its shape in high oven heat without warping or popping.

Chicago Metallic says the rack doubles as a roasting rack inside the pan. Note the material: the listing calls it chrome wire, not stainless. America’s Test Kitchen’s wire rack testing included a chrome rack it recommended, which was not dishwasher safe, so wash a chrome rack by hand and dry it. ATK also cautions that racks and metal tools can scratch nonstick sheet pans, so lower the rack in gently.

The set is dishwasher safe, but the maker recommends hand washing to extend the life of the nonstick coating. The listing does not give an oven temperature limit. The warranty is lifetime limited, per the listing.

Why we like it

  • Two pans and a rack in one set
  • Heavy-gauge steel resists warping, per Chicago Metallic
  • Nonstick coating for easy release
  • Lifetime limited warranty

Key specifications

Model 16833
Type Two jelly roll pans with cooling rack
Size Pans 17 x 12.25 in each
Material Heavy-gauge steel
Coating Nonstick
Rack Chrome wire
Oven-safe to Not stated
Dishwasher safe Yes; hand washing recommended

Why we recommend it

It suits the home baker who wants two matching pans and a rack in one box and bakes more than broils.

Skip it if you want a stainless rack; this one is chrome-plated wire.

Pros and cons

Pros

  • Two pans included
  • Easy release
  • Rack doubles for roasting

Cons

  • Chrome rack, not stainless
  • Heat limit not stated
  • Rack can scratch the coating

7. Wildone Stainless Steel Baking Sheet with Rack Set, 2 Pans and 2 Racks – All Stainless, Dishwasher-Safe

Best all-stainless pairBaking Sheet with Rack Set [2 Pans + 2 Racks]

Wildone’s set gives you two 18 x 13 x 1-inch sheet pans and two 16.5 x 11.5 x 0.6-inch racks, all in 18/0 stainless steel with no coating. The racks are fully welded, the pans have a mirror finish and smooth rolled edges, and the maker says both pans and racks are dishwasher safe. Two of everything means one set can crisp while the other cools.

The 0.6-inch rack height is close to the roughly 5/8 inch that America’s Test Kitchen preferred for keeping food contained in the pan. A stainless pan will not react with tomatoes or citrus, which makes these good for roasting tomatillos and chiles. ATK did find that stainless sheet pans offer no browning advantage over aluminum, though, and this listing does not state the gauge, so expect a lighter-built pan than the clad Hestan.

The listing does not give a maximum oven temperature or a model number. Wildone does not state where the set is made.

Why we like it

  • Two pans and two racks
  • Uncoated 18/0 stainless throughout
  • Fully welded racks
  • Dishwasher safe, per the listing

Key specifications

Model Not stated
Type Two sheet pans with two racks
Size Pans 18 x 13 x 1 in; racks 16.5 x 11.5 x 0.6 in
Material 18/0 stainless steel
Coating None
Rack 18/0 stainless steel, fully welded
Oven-safe to Not stated
Dishwasher safe Yes

Why we recommend it

It suits the cook who wants everything to go in the dishwasher and roasts acidic food often.

Skip it if you want the most even browning; ATK found aluminum browns at least as well as stainless.

Pros and cons

Pros

  • Non-reactive
  • Dishwasher safe
  • Two full sets

Cons

  • Gauge and heat limit not stated
  • Less-known maker
  • Stainless can stick without oil

8. Checkered Chef Stainless Cooling Racks, Half Sheet, 2-Pack – The Rack for the Pan You Own

Best rack to addCheckered Chef Cooling Racks for Cooking and Baking - Cooling Wire Rack

If you already own good half sheets, you may only need the rack. Checkered Chef’s half-sheet rack is the favorite in America’s Test Kitchen’s wire rack review, which called it sturdy and a good fit for its favorite baking sheet and listed it as stainless, broiler safe and dishwasher safe. This listing is a pair of 17 x 11.75-inch racks, sized for standard half-sheet pans.

Checkered Chef describes the racks as heavy-gauge stainless steel with a tight crosshatch grid that supports cookies and roasts without bowing, and says they are oven safe and dishwasher safe. ATK noted the grid is slightly larger than some, with an extra support bar, and that the rack has a little wiggle room in the pan. Pair it with the Vollrath half sheets from our vegetable roasting guide and you have a commercial-style pan and rack.

Checkered Chef also sells a matched aluminum pan and stainless rack set, but it was not in stock on Amazon when we checked, which is why we list the racks on their own. This listing does not state a maximum temperature; ATK lists the rack it reviewed at 500°F.

Why we like it

  • Top pick in ATK’s wire rack review
  • Stainless steel, oven and dishwasher safe
  • Tight crosshatch grid
  • Two racks in the pack

Key specifications

How to choose a sheet pan and rack

Five things decide whether a pan and rack set earns its place. In order of importance:

1. A rack that fits the pan

America’s Test Kitchen says a good rack should fit snugly inside the baking sheet, and preferred racks that sit about 5/8 inch high so food stays contained. Matched sets solve this; if you buy separately, compare the rack’s outside size with the pan’s inside size before you order.

2. Rack material: stainless, chrome or nonstick

Stainless racks have no coating to wear and, per ATK, can go under the broiler. Chrome-plated wire is cheaper; ATK recommended one chrome rack but it was not dishwasher safe. Nonstick racks release food easily, but ATK left them out of its testing because they would not be safe under the broiler. Read the listing: makers state the rack material, and that tells you how hot you can go.

A braided loaf cooling on a wire rack.

3. Pan material and acid

Bare aluminum is ATK’s default for even browning, but it reacts with tomatoes, citrus and vinegar. Stainless does not react and suits acidic food and the broiler. Nonstick releases food easily and resists acid but should stay at or below 450°F, per ATK and the makers here.

4. Support under the grid

A rack with too few cross supports sags under a tray of wings. ATK looks for at least three support bars. A tight grid also keeps small pieces, like diced potatoes or chile strips, from falling through.

5. Size and care

A half sheet is the most useful size because recipes and racks are built around it; quarter sheets suit small households and countertop ovens. Then check care: most aluminum pans are hand wash only, most stainless racks go in the dishwasher, and nonstick lasts longer washed gently by hand.

How we chose these eight pan and rack sets

We started with what a working kitchen asks of a sheet pan and rack: a rack that fits and stands firm, materials that handle the heat you cook at, and pieces that are easy to clean. We searched for pan-and-rack sets sold on Amazon in the United States, checked each one’s availability with Amazon’s product data, and kept only in-stock items from makers we could identify. Specifications, including each rack’s stated material, come from the maker’s site or the brand’s Amazon listing; where neither gives a figure, we wrote “Not stated.” Independent findings come from America’s Test Kitchen’s reviews of rimmed baking sheets, nonstick baking sheets and wire racks, which we read directly. Checkered Chef’s matched set was out of stock and we found no Vollrath pan-and-rack set on Amazon, so we covered those makers with a rack-only pick and a link to our vegetable roasting guide. We have not cooked with these sets for this guide.

Baking pan and rack questions, answered

What is the best baking pan with rack?

For most kitchens, an uncoated aluminum half sheet with a stainless rack, like the Ultra Cuisine set. Choose the Hestan stainless set if you broil often or roast acidic food, the USA Pan set for nonstick release, and the Nordic Ware quarter sheet set for small batches.

Can a cooling rack go in the oven?

Only if the maker says so. The racks in this guide are all described as oven safe, but their limits differ: USA Pan’s coated rack is rated to 450°F, Nordic Ware’s uncoated quarter-sheet rack to 500°F and broiling, and ATK lists its stainless Checkered Chef pick at 500°F. Check before you put any rack under the broiler.

Is a stainless steel rack better than chrome?

Stainless has no plating to wear and usually goes in the dishwasher; ATK lists its stainless picks as dishwasher safe and its recommended chrome rack as hand wash only. Chrome racks cost less. Either works if it fits the pan and has enough support bars.

Can I use a wire rack in a nonstick pan?

You can, but carefully. ATK advises keeping wire racks out of nonstick sheet pans where possible because they can scratch the coating. If you use one, set it down gently, do not slide it, and consider a coated rack like USA Pan’s.

Why use a rack for wings and bacon?

Raising food on a rack lets hot air reach the underside and lets fat drip into the pan, so the food crisps on all sides without turning. On a flat pan, the bottom sits in rendered fat and the top dries out.

Our final pick for a pan and rack

Buy the Ultra Cuisine set if you want an uncoated aluminum pan with a stainless rack for everyday roasting, crisping and cooling. Choose the Hestan for the broiler and acidic food, the USA Pan set for nonstick, the Nordic Ware Oven Crisp tray for wings and fries, the Nordic Ware quarter-sheet set for small batches, the Chicago Metallic set for two pans on a budget, the Wildone pair for an all-stainless, dishwasher-safe kit, and the Checkered Chef racks if you already own the pans.
