Wood, Metal or Perforated: The Best Pizza Oven Peel

Wood, aluminum, perforated and turning peels for outdoor pizza ovens, grills and home ovens: what each does best, sizes, handle length and care.

A small baked pizza with peppers on an aluminum peel with a wooden handle, held out from a kitchen counter
A baked pizza on an aluminum peel with a wooden handle.

In a pizza kitchen the peel is the tool that gets used on every single pie, and it decides more failures than the oven does. A pizza that sticks to the peel tears or folds as it hits the stone. Too much flour underneath burns and tastes bitter. A peel too short for a hot oven puts your forearm over the fire every time you turn the pie.

There are really two jobs and two kinds of peel. A launching peel, wood or flat metal, carries raw dough in and brings the baked pizza out. A turning peel, small and round on a long handle, spins the pizza in the oven so the side facing the flame does not burn. This guide covers both, for outdoor pizza ovens, grills and home ovens, and explains which material does which job best.

Quick verdict: which pizza peel to buy

For most people with an outdoor pizza oven, the best pizza oven peel is the Ooni 14-inch Perforated Pizza Peel: a light anodized aluminum blade with holes that let excess flour fall through, on a long heat-resistant handle, at 21.5 ounces. Add the Gozney Balance Turning Peel if your oven runs hot enough to need turning mid-bake. If you make pizza in a home oven and want one peel for building, launching and serving, start with the American Metalcraft 2414 wood peel.

Below, the five strongest picks side by side, then all eight in detail, how to choose, and how to launch without sticking.

Our picks for the best pizza oven peel

These eight cover the main kinds: perforated aluminum launching peels, a turning peel, wood and composite peels for building and serving, a large restaurant-supply peel and a folding peel for small kitchens. Each section says what it suits and gives one honest reason to skip it.

1. Ooni 14-inch Perforated Pizza Peel – Light, With Flour-Release Holes

Best overallooni 14” Perforated Pizza Peel – Long Handle Perforated Aluminium Pizza Paddle – Lightweight Pizza Turning Peel Outdoor Pizza Oven Accessories

Ooni makes outdoor pizza ovens, and this is the peel built around them. The blade is anodized aluminum with rows of perforations. According to Ooni, the holes let excess flour fall away before the pizza goes in and let steam escape from the underside when it comes out, so the crust stays crisp instead of sweating on a solid sheet.

Ooni’s product page gives the 14-inch peel’s overall size as 27.5 by 14 inches and its weight as 21.5 ounces, which is light enough to launch with one hand and to slip under a pizza to turn it. The handle is glass-reinforced nylon, which Ooni says resists heat better than most handle materials. The listing points out why length matters: Ooni’s ovens can reach 500°C (about 930°F), and the handle keeps your hand back from that heat.

Care is simple but specific. Ooni says hand wash only, no abrasive cleaners, and do not leave the peel exposed to high heat for long periods, which means do not rest it on the oven mouth between pizzas. Store it indoors.

Why we like it

  • Perforations shed excess flour and vent steam (Ooni)
  • 21.5 oz, light for a 14-inch peel
  • Heat-resistant glass-reinforced nylon handle
  • Also sold in a 12-inch size for smaller ovens

Key specifications

Model UU-P06500
Material Anodized aluminum blade, glass-reinforced nylon handle
Blade size 14 in wide (27.5 x 14 in overall)
Handle length Not stated
Perforated Yes
Weight 21.5 oz (Ooni)
Dishwasher safe No, hand wash only
Care No abrasives; store indoors; keep out of prolonged high heat

Why we recommend it

It suits anyone with an outdoor pizza oven, Ooni or otherwise, who makes pizzas up to about 13 inches and wants one peel that launches, turns and retrieves.

Skip it if you build pizzas on the peel and let them sit; dough on a perforated blade can settle into the holes, and a solid wood peel is more forgiving for slow builders.

Pros and cons

Pros

  • Light and thin-edged
  • Less burnt flour on the crust
  • Clear maker specifications

Cons

  • Hand wash only
  • Not ideal for slow building on the peel
  • Handle length not published

2. Gozney Balance Turning Peel, 8-inch – Long Reach for Turning

Best turning peelGozney Balance Pizza Turning Peel

In an oven running at several hundred degrees, the side of the pizza nearest the flame chars in seconds. A turning peel is how pizza makers deal with it: a small round blade on a long handle that lifts the edge of the pizza and spins it in place without pulling it out of the oven.

Gozney’s Balance turning peel has an 8-inch perforated blade of pressed and welded stainless steel on an FSC-certified beech handle, 35 inches long overall, according to Gozney. That is the longest turning peel Gozney makes. The listing says the teardrop-shaped blade is designed for the turning motion and that the wood handle moves the center of gravity toward your hand for more control. Gozney says it suits all pizzas but is best for those under 16 inches.

Gozney’s page does not list a weight or care instructions. Treat it like any wood-handled tool: wipe the blade, keep the handle out of standing water and dry it before hanging it by the metal loop.

Why we like it

  • 35-inch length keeps hands well back from the flame
  • 8-inch perforated stainless blade
  • Teardrop shape designed for spinning a pizza
  • Hanging loop for storage

Key specifications

Model Balance Turning Peel (AD1773)
Material Stainless steel blade, beech wood handle
Blade size 8 in (203 mm) round
Handle length Not stated (35 in overall)
Perforated Yes
Weight Not stated
Dishwasher safe Not stated
Care Not stated by Gozney

Why we recommend it

It suits anyone with a gas or wood-fired oven that bakes in a couple of minutes, where turning the pizza is part of every bake, not an occasional fix.

Skip it if you bake in a home oven or on a grill stone; at lower heat, a launching peel turns the pizza just as well and you do not need a second tool.

Pros and cons

Pros

  • Long reach
  • Made for the turning motion
  • Stainless blade

Cons

  • A second peel to buy and store
  • Weight and care not published
  • Cannot launch a full pizza

3. American Metalcraft 2414 Wood Pizza Peel – Forgiving for Building and Launching

Best wood peelAmerican METALCRAFT

American Metalcraft supplies restaurants, and this is a plain wood peel of the kind many pizzerias use for building and launching. Wood is slightly porous and rough at the surface, so raw dough sticks to it less than it does to bare metal, and it does not draw heat out of your hands or the dough. That makes a wood peel the easier choice if you stretch, top and launch on the same board.

The listing title gives the blade as 14 inches wide by 15 inches long with an 8-inch handle, 24 inches overall, while one line in the description says 13 by 14 inches, and retailers vary too. Either way it carries a 12- to 13-inch pizza. The tapered front edge, according to the listing, slips under pizzas easily. American Metalcraft also suggests it as a cutting or serving board.

Restaurant-supply retailers say to hand wash it and never soak it or put it in the dishwasher, because wood can warp or crack when soaked. The short handle is the trade-off: fine for a home oven, close to the heat in a 900°F outdoor oven, where you would retrieve with a metal peel.

Why we like it

  • Wood releases raw dough more easily than bare metal
  • Tapered front edge (listing)
  • Doubles as a cutting and serving board
  • Restaurant-supply maker

Key specifications

Model 2414
Material Wood (species not stated)
Blade size 14 x 15 in per title (13 x 14 in in description)
Handle length 8 in (24 in overall)
Perforated No
Weight Not stated
Dishwasher safe No (retailers)
Care Hand wash; do not soak

Why we recommend it

It suits home-oven and grill bakers who build pizzas on the peel, and anyone new to launching who wants the most forgiving surface.

Skip it if you mainly bake in a very hot outdoor oven; the short handle and thick wood make it a poor retrieving and turning tool there.

Pros and cons

Pros

  • Easy release for raw dough
  • Serves as a board
  • Simple, durable design

Cons

  • Short handle
  • Blade size inconsistent across listings
  • Must be kept dry

4. Epicurean 17 x 10-inch Pizza Peel – Dishwasher-Safe Composite

Best for home ovensEpicurean Pizza Peel

Epicurean makes cutting boards from a wood-fiber composite, and this peel is the same material: a 3/16-inch sheet, nonporous, with a beveled front edge and a built-in hanging hole instead of a separate handle. The listing says it is dishwasher safe, knife friendly, NSF certified for commercial kitchens and made in the USA.

The important number is the temperature: Epicurean rates it to 350°F. That is fine for carrying a pizza to a home oven, sliding it off onto a stone, and cutting and serving on it afterward. It is not a peel to push into a 900°F outdoor oven or to leave resting on a hot stone; use a metal peel to retrieve in that case.

Because the board is reversible, you can build on one side and cut on the other. At 17 by 10 inches it is narrower than most launching peels, so it suits pizzas of about 10 inches, flatbreads and loaves better than wide 14-inch pies.

Why we like it

  • Dishwasher safe and nonporous (listing)
  • Thin 3/16-inch sheet with beveled edge
  • Cut and serve on it; reversible
  • Made in the USA; NSF certified

Key specifications

Model 007-171001
Material Wood-fiber composite (Epicurean)
Blade size 17 x 10 in overall, 3/16 in thick
Handle length Integrated handle; not stated
Perforated No
Weight Not stated
Dishwasher safe Yes
Care Temperature resistant to 350°F; keep out of hotter ovens

Why we recommend it

It is the best pizza peel for home oven cooks who want one board for building, launching, cutting and serving that goes in the dishwasher.

Skip it if you own an outdoor pizza oven; the 350°F rating rules it out for anything beyond launching and serving.

Pros and cons

Pros

  • Easiest peel here to clean
  • Thin, knife-friendly surface
  • Lifetime warranty (listing)

Cons

  • Rated only to 350°F
  • Narrow for big pizzas
  • Short reach

5. Checkered Chef Foldable 13 x 15-inch Aluminum Peel – Folds Flat

Budget pickCheckered Chef Pizza Peel - Foldable 13" x 15" Aluminum Spatula Paddle

Storage is the quiet problem with peels. A full-size one is long, awkward and does not fit in a drawer. Checkered Chef’s answer is a hinge: the 13 by 15-inch aluminum head folds flat against the handle, according to the listing, so it fits in a drawer or cabinet.

The listing describes a thin metal edge that slides under crusts, lightweight aluminum, and a handle rated for high-temperature environments, and says it works with indoor pizza ovens, outdoor gas and charcoal grills and standard home ovens. Unusually for a peel with a handle, Checkered Chef says both the head and handle are fully dishwasher safe.

The listing does not give the handle length or weight, and does not say whether the blade is perforated, so we have left those as “Not stated”. With a folding handle, expect a shorter reach than the long-handled peels on this list.

Why we like it

  • Folds flat for drawer storage
  • Generous 13 x 15-inch head
  • Dishwasher safe, handle included (listing)
  • Rated for oven, grill and pizza oven use

Key specifications

Model Foldable 13 x 15 Aluminum Peel
Material Aluminum head; heat-safe handle (material not stated)
Blade size 13 x 15 in
Handle length Not stated
Perforated Not stated
Weight Not stated
Dishwasher safe Yes
Care Dishwasher or rinse and rack dry

Why we recommend it

It suits apartment kitchens, campers and anyone who bakes pizza occasionally and does not want a peel hanging on the wall.

Skip it if you bake in a very hot outdoor oven every week; a fixed long handle gives more reach and fewer moving parts.

Pros and cons

Pros

  • Compact storage
  • Fully dishwasher safe
  • Large head

Cons

  • Shorter reach
  • Few specifications published
  • Hinge is one more thing to wear

6. Gozney 14-inch Balance Placement Peel – Flat Nose for Steady Launches

Best for beginnersGozney 14" Balance Pizza Placement Peel with Perforated Aluminum Blade

Gozney sells two families of placement peels, and this is the one it aims at beginner and intermediate pizza makers. The difference is in the blade: a perforated aluminum blade with a flat nose, which Gozney says increases stability and reduces side-to-side rocking as you slide the pizza in, so it keeps its shape during the launch.

The listing gives a 15.5-inch beech handle and 32.5 inches overall, for pizzas up to 14 inches. Gozney is specific about fit: the 14-inch placement peel is for its Arc, Arc XL and Dome ovens and is not compatible with the smaller Tread or Roccbox, which take the 12-inch version. The handle is replaceable, which is useful because a scorched handle is the usual way a peel wears out.

Gozney’s own page gives no weight or care instructions. As with the turning peel, keep the wood handle out of the dishwasher and dry it before hanging.

Why we like it

  • Flat nose reduces rocking during launch (Gozney)
  • Perforated aluminum blade
  • Replaceable beech handle
  • Clear oven-compatibility guidance

Key specifications

Material Aluminum blade, beech wood handle
Blade size For pizzas up to 14 in
Handle length 15.5 in (32.5 in overall)
Perforated Yes
Weight Not stated
Dishwasher safe Not stated
Care Not stated by Gozney

Why we recommend it

It suits owners of a 14-inch oven, especially a Gozney Arc or Dome, who want a stable first launching peel with a handle they can replace.

Skip it if your oven is a 12-inch model such as the Roccbox; Gozney says this size does not fit.

Pros and cons

Pros

  • Stable launches
  • Replaceable handle
  • Maker states which ovens it fits

Cons

  • Too large for 12-inch ovens
  • Weight not published
  • No care guidance from Gozney

7. American Metalcraft 2814 Aluminum Pizza Peel, 14 x 16-inch – Big Blade for Big Pizzas

Best for large pizzasAmerican Metalcraft 2814 28" Aluminum Pizza Peel with 12" Wood Handle

This is the classic pizzeria peel: a flat 14-gauge aluminum blade, 14 by 16 inches, on a 12-inch wood handle, 28 inches overall, according to the listing. The large blade carries a 14- to 15-inch pizza, or a long rectangular one, with room around the edges.

Solid aluminum is the best surface for retrieving: thin, rigid and quick to slide under a baked crust. It is less forgiving for launching than wood because raw dough grips bare metal, so build on the counter or on a wood peel and transfer, or use a light dusting of semolina. A restaurant-supply retailer notes that the blade needs no seasoning and resists absorbing odors.

Retailers say hand wash only, not dishwasher safe, to protect the wood handle. Weight figures differ between retailers, so we have left it unstated. At 28 inches, the reach is moderate: fine for a grill or home oven, shorter than the dedicated outdoor-oven peels here.

Why we like it

  • Large 14 x 16-inch blade
  • 14-gauge aluminum (listing)
  • Thin, rigid edge for retrieving
  • Restaurant-supply maker

Key specifications

Model 2814
Material 14-gauge aluminum blade, wood handle
Blade size 14 x 16 in
Handle length 12 in (28 in overall)
Perforated No
Weight Not stated
Dishwasher safe No (retailers)
Care Hand wash and dry

Why we recommend it

It suits anyone who bakes large pizzas on a big stone, grill or home oven and wants the plain, sturdy design restaurants buy.

Skip it if you have a compact 12-inch outdoor oven; the blade is wider than the opening of some small ovens.

Pros and cons

Pros

  • Room for big pizzas
  • Rigid, thin blade
  • Simple construction

Cons

  • Raw dough sticks more than on wood
  • Not dishwasher safe
  • May be too wide for small ovens

8. Hans Grill Pizza Peel PRO, 12-inch Perforated – Compact Perforated Option

Best for 12-inch ovensHans Grill Pizza Peel PRO

Hans Grill sells pizza and grill tools, and its PRO peel is a 12-inch perforated blade of anodized aluminum on a turned beechwood handle. The listing makes the same case for perforation that Ooni does: excess flour falls through before the launch, and steam escapes from under the baked pizza.

A 12-inch blade suits the compact 12-inch outdoor ovens, where a 14-inch peel can be wider than the mouth. The listing describes a tapered metal edge and a long wooden handle for launching, turning and retrieving.

Hans Grill does not give the handle length, weight or care instructions on the listing, so those rows read “Not stated”. Treat the wood handle as you would any other: hand wash and dry.

Why we like it

  • Perforated anodized aluminum blade
  • Sized for 12-inch ovens
  • Tapered edge for sliding under pizzas

Key specifications

Model Pizza Peel PRO
Material Anodized aluminum blade, beechwood handle
Blade size 12 in

Why we recommend it

It suits owners of compact 12-inch ovens who want a perforated peel without paying for an oven brand’s own.

Skip it if you want full specifications before you buy; Ooni publishes more detail for its 12-inch perforated peel.

Pros and cons

Pros

  • Perforated blade
  • Right size for small ovens
  • Wood handle

Cons

  • Few published specifications
  • Too small for 14-inch pizzas

How to choose a pizza peel

A line cook judges a peel by how it behaves in the two seconds of a launch and the two seconds of a retrieve. These are the factors that change those seconds.

1. Wood, composite or metal

  • Wood grips raw dough least and is the easiest to launch from, especially if you build on the peel. It is thick, so it is clumsy for retrieving, and it must be kept dry.
  • Composite boards such as Epicurean’s are thin and dishwasher safe, but check the heat rating: Epicurean’s is 350°F.
  • Aluminum is thin and light, ideal for retrieving and turning, but raw dough sticks to it more readily. Build on the counter, then slide the peel under.

2. Perforated or solid

Perforations let excess flour or semolina fall away so it does not burn on the stone, and they let steam escape from a baked crust, according to Ooni and Hans Grill. In very hot ovens, where burnt flour is a common complaint, they help. In a home oven with a slower bake, a solid peel is fine.

3. Size against your oven

Match the blade to the pizza and to the oven mouth. Outdoor ovens are sold by pizza size, commonly 12, 14 or 16 inches; Gozney is explicit that its 14-inch peel does not fit the 12-inch Roccbox or Tread. A peel one size larger than your pizza gives a margin; a peel wider than the opening is useless. For grills and home ovens, size to your stone: our guide to the best oven pizza pan covers stones and steels for the home oven.

4. Handle length and heat

The hotter the oven, the longer the handle should be. A short-handled wood peel is fine at the door of a 500°F kitchen oven. Ooni notes its ovens reach around 930°F; for those, a total length near 30 inches or more, or a long turning peel, keeps your hand away from the flame.

5. One peel or two

For a home oven or a grill, one launching peel is enough. For an outdoor oven that bakes in a couple of minutes, most pizza makers use two: a wood or perforated peel to launch and a turning peel to spin the pizza while it bakes.

How we chose these eight pizza peels

We started from what a kitchen asks of a peel: easy release, a thin edge, a size that fits the oven, and a handle long enough for the heat. We narrowed the field to peels sold on Amazon in the United States and in stock when we checked, and read the makers’ own pages where they loaded (Ooni and Gozney did). Where a maker publishes little, we used the brand’s Amazon listing and, for the American Metalcraft peels, restaurant-supply retailers’ care notes, and we say so. Figures that conflicted between sources are marked or left as “Not stated”. We left out sellers with no identifiable maker, near-duplicate sizes of the same peel, and American Metalcraft’s longer aluminum peels that were down to their last few units. We looked for a GI Metal peel and did not find one listed in stock. We have not used these peels for this guide, and we did not consult outside testing publications.

How to launch a pizza without it sticking

  1. Dust the peel lightly with flour or semolina. A little rolls like ball bearings; a lot burns on the stone.
  2. Work fast. The longer topped dough sits, the more it sticks. Stretch, top and launch within a minute or two.
  3. Shake before you launch. A small jerk of the peel should move the whole pizza. If one spot holds, lift that edge and toss a pinch of flour under it.
  4. Launch in one motion. Set the tip of the peel at the back of the stone, then pull the peel back sharply. Do not tilt and hope.
  5. Turn and retrieve with metal. A thin aluminum or stainless blade slides under a baked crust far more easily than wood.
A cook in a black apron and gloves holding a baked pizza on a wooden peel
A baked pizza carried out on a wooden peel.

The same peel moves flatbreads and breads onto a hot stone, and on a gas grill it works the way a spatula does over a comal, just bigger. If your peel will mostly work on an outdoor grill, our guides to the best gas grill and the best pellet grill cover the grills themselves.

Pizza peel questions, answered

What is the best pizza peel for a home oven?

A wood or composite peel. Home ovens bake more slowly, so perforations and long handles matter less, and the easier release of wood helps when you build on the peel. The American Metalcraft 2414 is the traditional choice; the Epicurean is the dishwasher-safe one, within its 350°F limit.

What is the best pizza peel for a pizza oven?

A perforated aluminum launching peel sized to your oven, such as the Ooni 14-inch or the Gozney Balance for 14-inch ovens, plus a turning peel for ovens that bake in a couple of minutes.

Is a wood or metal pizza peel better?

Wood launches raw dough more easily; metal retrieves and turns better because the blade is thinner. Many pizzerias keep one of each, and in a home kitchen you can choose by which step gives you trouble.

Do you need a turning peel?

Only for very hot ovens. If your pizza bakes in under a few minutes with a flame on one side, a turning peel saves the crust nearest the fire. In a home oven or on a grill, you can turn with the launching peel.

Can a pizza peel go in the dishwasher?

Some can. Epicurean and Checkered Chef say theirs are dishwasher safe. Ooni says hand wash only, and wood peels should never be soaked or run through a dishwasher because they can warp or crack.

What size peel do I need?

One that matches your pizza and fits through the oven’s opening. For a 12-inch oven, use a 12-inch peel; for 14- and 16-inch ovens, a 14-inch peel or larger.

Our pick for launching and turning

Buy the Ooni 14-inch perforated peel if you own an outdoor pizza oven and want one peel that does most of the work, and add the Gozney Balance turning peel once you are baking at full heat. For a home oven, the American Metalcraft wood peel or the Epicurean composite peel is the better fit, and the Checkered Chef folding peel is the answer when storage space is the problem.
