Half Sheet vs Quarter Sheet Pan: Which Size Do You Need?

Half sheet vs quarter sheet pan: size, cooking area, capacity, oven and toaster oven fit and storage compared, with two pans for each side.

Sheet pans come in fractions of a commercial bakery pan, and home cooks mostly meet two of them. The half sheet is the big rimmed pan that fills an oven rack. The quarter sheet is the small one that fits a toaster oven and slides into a sink without a fight. They do the same work, so the real question is how much food you cook at once and where you bake it.

In a restaurant kitchen, sheet pans are sized to the job and stacked by the dozen. At home you may only have room for two or three, so the size matters. This guide compares the half sheet and the quarter sheet on size, cooking area, capacity, oven fit, handling and storage, using makers’ own figures, then names two pans for each side.

Quick verdict: half sheet or quarter sheet?

If you buy only one, buy a half sheet. It holds about twice as much as a quarter sheet, it fits a standard home oven, and it handles sheet pan dinners, full batches of cookies and roasted vegetables for a family. Add a quarter sheet next, or buy one first if you cook for one or two, bake mostly in a toaster oven, or want a small pan for toasting nuts, broiling a few chiles and reheating. Most cooks end up using both.

The table sums up the differences. The sections after it explain each one.

Size: what the names actually mean

The names come from the commercial full sheet pan, which is too big for a home oven. A half sheet is half of that, and a quarter sheet is half again. Makers sell the half sheet as 18 by 13 inches and the quarter sheet as 13 by 9 inches, both about an inch deep. Fat Daddio’s lists exactly those outside sizes for its SP-HALF and SP-QTR pans.

Real pans vary a little around those numbers. Nordic Ware’s Naturals half sheet measures 17.9 by 12.9 inches outside, its aluminized quarter sheet 12.9 by 9.6 inches. USA Pan sells a 17.75 by 13-inch half sheet, and Great Jones’s Holy Sheet runs larger at 18.5 by 13.5 inches. If a rack, a silicone mat or an oven shelf is going to be tight, check the exact outside size, not the name.

One common mix-up: a quarter sheet is close to the footprint of a 9 by 13-inch cake pan, but it is about an inch deep rather than two. Our best 9×13 cake pans guide covers the deeper pan for cakes and casseroles.

Cooking area and capacity: about double

What matters is the flat floor inside the rim, and that is smaller than the outside size because of the rims and rounded corners. Fat Daddio’s gives an interior bottom of 16½ by 11½ inches for its half sheet and 11¼ by 8 inches for its quarter sheet. By our arithmetic that is about 190 square inches against 90, so the half sheet has a little over twice the floor.

Nordic Ware’s figures tell the same story. Its Naturals half sheet measures 17.1 by 12.1 inches inside, and its aluminized quarter sheet has a 12.1 by 8.8-inch cooking surface. That works out to roughly 207 and 106 square inches, close to two to one.

Fat Daddio’s also states a liquid capacity: 14 cups for the half sheet and 7.5 cups for the quarter sheet. You won’t fill a sheet pan with liquid often, but the figure is useful for a sheet cake, a pan of roasted tomatoes and their juices, or anything that releases liquid as it cooks.

In practice, double the area means one half sheet does the work of two quarter sheets. That counts for more than it sounds, because vegetables spread in a single layer brown, while vegetables piled up steam. That is general kitchen sense, not a measured figure, but it is why a sheet pan dinner for four belongs on a half sheet.

Oven fit: the half sheet is the home-oven standard

A half sheet is sized for a standard home oven. Great Jones’s listing says its 18.5 by 13.5-inch Holy Sheet fits standard ovens, and most racks, cooling grids and silicone mats sold for home bakers are cut to the half-sheet size. Our best sheet pan rack and best silicone baking mat guides follow that size.

The quarter sheet is the toaster-oven pan. USA Pan calls its uncoated quarter sheet the toaster oven sized utility pan, and Fat Daddio’s describes its quarter sheet as the ideal size for a toaster oven. Even so, toaster ovens vary a lot, so measure the inside of yours and the pan’s outside size, including any handles, before you buy. Don’t assume a half sheet will fit a toaster oven without measuring; at 18 inches long, it usually won’t.

Two quarter sheets can also share a full-size oven rack. That lets you roast two different things, such as tomatillos on one pan and cubed potatoes on another, and take each out when it’s done.

Handling, washing and storage

The listings give the weights. Great Jones lists its half sheet at 2 pounds and USA Pan’s uncoated half sheet comes in at 2.95 pounds, while USA Pan’s uncoated quarter sheet is 1.75 pounds and Fat Daddio’s quarter sheet 1.1 pounds. A half sheet loaded with a chicken and vegetables is a two-handed lift, and the pan is wide enough that you need clear counter space to set it down hot. A quarter sheet you can carry with one mitt.

Cleanup follows size. A half sheet is 18 inches long, so it can be awkward in a small or divided sink and may not fit flat on a dishwasher rack. A quarter sheet goes almost anywhere. For storage, a half sheet needs a cabinet at least 18 inches deep, or a slot for standing pans on edge. Quarter sheets slip in beside other bakeware.

What each size does best

The makers’ own lists of uses split along the same line. USA Pan calls its half sheet the workhorse for batch after batch of cookies, sheet cakes, sheet pan dinners and broiling nachos. It pitches the quarter sheet for roasting vegetables, reheating pizza, broiling nachos and small-batch focaccia. Great Jones says its quarter sheet suits single servings and small meals.

For a Mexican kitchen, the half sheet is the pan for nachos for a crowd, a tray of fajita vegetables and chicken, or a batch of conchas. The quarter sheet is the pan for toasting pepitas or sesame seeds while the oven heats, charring a few tomatillos and a jalapeño for salsa verde under the broiler, or crisping leftover flautas. Our best quarter sheet pan guide covers that small-pan side in more depth.

Our picks on each side of the half sheet vs quarter sheet question

Two picks per side, from makers that publish their sizes. None appears as the same listing on our other pages. Both half sheets have a nonstick coating, and the quarter side has one bare pan and one bare pair. All were in stock when we checked; the Great Jones and Caraway pans are sold by the makers themselves on Amazon, and the USA Pan and Nordic Ware pans by Amazon.com. For bare aluminum half sheets, our best baking sheets guide covers Nordic Ware’s Naturals and other classics.

1. Great Jones Holy Sheet Half Sheet Pan – Roomy Nonstick Workhorse

Half sheet pickGreat Jones Nonstick and Non Toxic Half Sheet Pan 18.5" x 13.5" (Blueberry)

Great Jones’s Holy Sheet is a slightly oversized half sheet at 18.5 by 13.5 inches, which gives a bit more room than the classic 18 by 13. Great Jones’s listing describes a heavy-duty carbon steel pan with its own nonstick coating and says it fits standard ovens. The listing gives a weight of 2 pounds.

It is oven safe to 450°F. Great Jones warns that higher temperatures may cause warping, so it isn’t the pan for a hot broiler or a 500°F oven. The listing calls it dishwasher-friendly but recommends hand washing to keep the nonstick surface, and says to avoid metal utensils.

A coated half sheet suits cookies, bars and sheet pan dinners where you want food to lift off without parchment. For high-heat roasting and broiling, a bare pan is the better choice.

Why we like it

  • Extra room: 18.5 x 13.5 inches
  • Nonstick release for cookies and bars
  • Light for its size: 2 lb (listing)
  • Sold by the maker

2. Caraway Large Ceramic-Coated Baking Sheet, 18 x 13 – Ceramic Coating, Oven to 550°F

Half sheet, higher heatCaraway Non-Stick Ceramic-Coated 18" x 13" Baking Sheet

Caraway’s large baking sheet is the classic half-sheet size, 18 by 13 inches, with a ceramic nonstick coating. Caraway’s listing says it withstands oven temperatures up to 550°F, higher than most coated sheets, so it can roast vegetables hot and still release them.

Caraway states that its baking sheets are free of PTFE, PFOA, PFAS, lead and cadmium; that is the maker’s claim. It asks for hand washing, and the listing suggests storing the sheets in their organizers. The listing’s weight field reads about 5.7 pounds, which looks like a shipping weight, so treat it with caution.

Because it is the standard half-sheet size, racks and mats cut for half sheets should fit it. Ceramic coatings release best with a little fat and gentle tools, and they wear in time like any coating.

Why we like it

  • Standard 18 x 13 size
  • Oven safe to 550°F (listing)
  • Ceramic nonstick coating
  • Sold by the maker

3. USA Pan Uncoated Quarter Sheet Pan – Bare Pan for the Toaster Oven

Quarter sheet pickUSA Pan Bakeware Traditional Aluminized Steel Uncoated Quarter Sheet Baking Sheet Pan

USA Pan’s uncoated quarter sheet is aluminized steel with no nonstick coating and no corrugation, so it is flat and bare. The listing gives it as 13 by 9.5 inches and 1.75 pounds, and USA Pan calls it the toaster oven sized utility pan you’ll grab daily.

It is oven and broiler safe to 450°F. USA Pan says the pan will darken slightly with use, which it calls normal, and recommends greasing or lining it with parchment or a silicone mat. Bare metal takes metal spatulas and won’t flake, which suits a pan for broiling chiles or toasting seeds.

USA Pan names roasting vegetables, reheating pizza, broiling nachos and small-batch focaccia as its jobs. It is made in the US from domestic and globally sourced materials, according to the listing.

Why we like it

  • Sized for toaster ovens (maker)
  • No coating to wear or scratch
  • Broiler safe to 450°F
  • Made in the US (listing)

  • Darkens with use

4. Nordic Ware Aluminized Steel Quarter Sheet, 2-Pack – Two Small Pans, Stated Floor Size

Quarter sheet pairNordic Ware Aluminized Steel Quarter Sheet Baking Pans

Nordic Ware’s quarter sheets come as a pair, and the listing gives both the outside size, 12.9 by 9.6 by 1.1 inches, and the cooking surface, 12.1 by 8.8 inches. That second figure is the one most makers leave out, and it is the number to check against a toaster oven tray.

The pans are uncoated aluminized steel, made without PFAS according to Nordic Ware, with a rim reinforced by steel wire to keep them flat as they heat and cool. Nordic Ware says they are made in America of domestic and imported materials.

A pair suits the two-pan approach: roast two things side by side on one oven rack, or keep one pan for savory jobs and one for sweet. The listing gives 3.32 pounds, which we take to be for both pans.

Why we like it

  • Cooking surface stated: 12.1 x 8.8 in
  • Wire-reinforced rim against warping
  • Two pans in the box
  • Sold by Amazon.com

Key specifications

  • Two pans
  • Floor size published
  • Reinforced rim

Cons

  • Oven limit not stated
  • Bare surface needs fat or parchment
  • Care not stated in the listing

Half sheet vs quarter sheet pan questions, answered

How many quarter sheets fit on a half sheet?

Two, by area. A quarter sheet is half of a half sheet, which is how it gets its name. The flat floors run at about two to one on Fat Daddio’s and Nordic Ware’s figures.

Will a half sheet fit in my oven?

In a standard home oven, yes; that is the size it is made for, and Great Jones says its larger 18.5-inch pan fits standard ovens. Compact and apartment ovens vary, so measure the rack before buying.

Will a quarter sheet fit in a toaster oven?

Often. USA Pan and Fat Daddio’s both describe their quarter sheets as toaster oven sized, but measure the inside of your toaster oven against the pan’s outside size first.

Can I bake a half-sheet recipe on two quarter sheets?

Yes. The area is about the same, so the batch spreads to the same depth. Bake them side by side on one rack if they fit, or swap their positions partway through if you use two racks. Small pans may finish a few minutes sooner, so check early.

Which size should a beginner buy first?

The half sheet. It does more jobs, and most racks, mats and recipes assume it. Add a quarter sheet when you find yourself heating a big pan for a small batch.

Which pan goes in your oven first

For most kitchens the half sheet comes first. It is the size home ovens, racks and recipes are built around, and it holds about twice as much as a quarter sheet. The quarter sheet comes first only if you cook for one or two or bake mostly in a toaster oven. After that, the small pan earns its place quickly, and a pair of them is one of the most useful additions to a kitchen.
