A silicone mat that is fine for cookies is not automatically right for a sourdough loaf. Sourdough is baked hot, often inside a preheated Dutch oven, and the dough goes in wet and slack. So the questions change: how hot is the mat rated, can you lower a proofed round into a pot on it without burning your hands, and does the crust on the bottom come out crisp or steamed?
That is why this guide covers three kinds of silicone for bread: perforated mats for baking on a sheet pan, silicone slings and lifters that go into a Dutch oven or loaf pan, and large counter mats for shaping. Our main silicone baking mat guide covers the all-purpose sheet-pan mats, including the Silpat, Mrs. Anderson’s and Nordic Ware mats, so here we pick different products with sourdough in mind.

Quick verdict: the silicone mat for sourdough to buy
If you bake loaves on a sheet pan, the best silicone baking mat for sourdough is the Demarle Silpain Half Size Mat: it is perforated for air circulation when baking bread, according to the listing, and made of fiberglass and silicone by the company behind Silpat. If you bake in a Dutch oven, choose the King Arthur Round Loaf Lifter instead, a glass-fiber silicone sling rated to 500°F that the dough can proof and bake in.

Our picks for the best silicone baking mat for sourdough
These seven fall into three groups. Perforated sheet-pan mats let air reach the bottom of a loaf. Slings and lifters line a Dutch oven or loaf pan so you can lower the dough in and lift the bread out. Counter mats give you a non-stick surface to knead and shape on. Most bakers need one from the first two groups, depending on how they bake, and some add a counter mat.

1. Demarle Silpain Half Size Mat – Perforated for Bread

Silpain is Demarle’s bread mat, the perforated cousin of the Silpat. The listing says it is perforated for air circulation when baking bread and made of fiberglass and silicone. For a sourdough baker who shapes batards or rolls and bakes them on a sheet pan, those holes are the point: they let air reach the underside of the loaf rather than sealing it against a solid sheet.
It measures 11.6 x 16.5 inches and fits sheet pans of 13 x 18 inches, the standard half sheet. Demarle states that the materials comply with French, European and United States regulations for materials that touch food. The listing does not give a maximum oven temperature or say whether it can go in the dishwasher, so check before you push it past the temperatures your recipe calls for.
One thing to know before you buy: America’s Test Kitchen, in its October 2026 review of silicone baking mats, notes that the Silpat’s manufacturer has recently gone out of business and that its mats are still available at some retailers. This listing showed as in stock when we checked, but supply may not last.
Why we like it
- Perforated for air circulation when baking bread, per the listing.
- Fiberglass and silicone construction.
- Fits a standard 13 x 18-inch half sheet pan.
- Materials comply with US and European food-contact rules, per Demarle.

Why we recommend it
It suits bakers who make batards, baguettes, rolls or bolillos on a sheet pan and want a mat designed for bread rather than cookies.
Skip it if you bake every loaf in a Dutch oven; a sling does that job better.

2. King Arthur Round Loaf Lifter – Proof and Bake in the Same Sling

Most home sourdough is baked in a preheated Dutch oven, and the hard part is getting a soft, proofed round into a pot at 450°F or more without deflating it or burning a wrist. A silicone sling solves that. King Arthur Baking’s version is made of silicone reinforced with natural glass fibers, with sealed edges, and King Arthur rates it to 500°F.
The instructions on the listing are worth reading because they describe a slightly different method from most slings. You set the lifter in the Dutch oven with the tabs over the sides, put the shaped dough in for its second rise, put the lid on with the tabs outside, and bake. Then you lift the finished loaf out by the tabs. If you prefer to proof in a banneton, you can still use it the usual way, as a carrier into a hot pot.
King Arthur says it is oven, microwave and dishwasher safe, and asks you to use only plastic utensils or cutters on it and to keep it off direct heat such as a stovetop. The listing gives its size as 10.5 x 3.625 x 1.125 inches, which reads like a folded or packaged size; the flat diameter is not stated, so check that it suits your pot.
Why we like it
- Rated to 500°F, per King Arthur.
- Glass-fiber-reinforced silicone with sealed edges.
- Tabs stay outside the lid for an easy lift.
- Dishwasher safe, per the listing.

Pros
- High heat rating

3. DANIA & DEAN 26 x 16-Inch Pastry Mat – A Thick Counter Mat for Shaping

Not every sourdough baker wants a mat on the counter; many shape on bare wood or stone with a little flour. But if your counter is tile, laminate or simply too small, a large silicone mat gives you a clean surface to knead, stretch and shape on, and it rolls up afterward.
DANIA & DEAN’s mat is 26 x 16 inches, big enough to preshape two loaves side by side. The listing says it is 0.7 mm thick, reinforced with fiberglass, and has a non-slip bottom that holds to the counter while you roll, cut or press dough. The latest version has fully encapsulated silicone borders, according to the maker, and bold measurement guides in inches and centimeters on each side.
The listing rates it from -45°F to 450°F for oven, microwave and freezer use, and says it is dishwasher safe. At 26 inches long it is a counter tool first; it will not fit a home half sheet pan. Keep a bench scraper with a plastic or nylon edge for it, since a sharp steel blade can cut silicone.
Why we like it
- Large 26 x 16-inch working area.
- 0.7 mm thick with fiberglass, per the listing.
- Non-slip bottom.
- Inch and centimeter guides on each side.

Why we recommend it
It suits bakers who knead and shape on a counter that dough sticks to, or who want a surface they can roll away after each bake.
Skip it if you have a wooden or stone bench you like; a light dusting of flour on that works without a mat.
Pros and cons
Pros
- Room for two loaves
- Thick and non-slip
- Dishwasher safe
Cons
- Too big for a home sheet pan
- Smaller, Amazon-first brand

4. AMYONE Perforated Half-Sheet Mats, Set of 2 – Two Mesh Mats for Rolls and Loaves

If you like the idea of a perforated mat but want two of them, AMYONE’s set is the alternative to the Silpain. Each mat is 11.6 x 16.5 inches, the same footprint, and fits a standard 18 x 13-inch half sheet pan, according to the listing.
The mats are food-safe silicone embedded in fiberglass fabric, with a perforated surface that the listing says lets heat and steam circulate, and AMYONE says they are dishwasher safe. This listing, for the Sakura Pink version of the same half-sheet mat, does not state a heat limit. AMYONE gives 480°F on listings for its other perforated half-sheet mats, but check before a very hot bake. Two mats means two trays of rolls or bolillos at once, or one loaf on each rack.
AMYONE is an Amazon-first brand and much of its listing is marketing language, so we have used only the plain specifications. One caution that applies to every perforated mat: America’s Test Kitchen found that a perforated sourdough mat it reviewed left cosmetic markings on the bottom of loaves.
Why we like it
- Two perforated mats in one pack.
- Perforated mesh for heat and steam, per the listing.
- Fits a standard half sheet pan.
- Dishwasher safe, per AMYONE.
Key specifications

Why we recommend it
It suits bakers who want perforated mats for rolls and loaves on a budget, or who bake two trays at once.
Skip it if you would rather buy from an established bakeware maker; the Silpain comes from one.
Pros and cons
Pros
- Two mats
- Fits a half sheet pan
- Dishwasher safe
Cons
- Amazon-first brand
- Perforations can mark the crust
5. KneadAce Round and Oval Bread Slings, Set of 2 – One Sling for Each Pot Shape

Round slings do not suit an oval pot or a long batard. KneadAce’s pack solves that with one round and one oval sling, which the listing says fit standard 5 to 7-quart Dutch ovens.
Each has long handles so your hands stay clear of the rim as you lower the dough in and lift the loaf out, and a hanging-hole cutout for storage. KneadAce rates them to 450°F and says they can be rinsed or washed on the dishwasher’s top rack. The listing describes a thick construction meant to stay stable under a full boule, but gives no thickness figure and does not say whether there is fiberglass inside.
That 450°F rating is the one to watch. Many sourdough recipes preheat a Dutch oven to 450°F or above, so check your recipe’s top temperature against it, or pick the King Arthur lifter, rated to 500°F, if you bake hotter.
Why we like it
- One round and one oval sling.
- Fits standard 5 to 7-quart pots, per the listing.
- Long handles keep hands clear of the rim.
- Top-rack dishwasher safe.
Key specifications

| Perforated | Not stated |
| Dishwasher safe | Yes, top rack |
| Made in | Not stated |
Why we recommend it
It suits bakers who switch between boules and batards, or own both a round and an oval Dutch oven.
Skip it if your recipe bakes above 450°F; the rating leaves no margin.
Pros and cons
Pros
- Two shapes in one pack
- Long handles
- Dishwasher safe
Cons
- Lower 450°F rating
- Thickness and reinforcement not stated

6. King Arthur Loaf Pan Lifters, Set of 2 – For Sourdough Sandwich Loaves

Sourdough is not only boules. A sourdough sandwich loaf bakes in a loaf pan, and an enriched dough can stick to the corners. King Arthur’s lifters line the pan with silicone so the loaf comes out by its tabs.
Each lifter measures 14.5 x 10.5 inches flat and is designed to fit 8.5 x 4.5, 9 x 5 and 10 x 5-inch loaf pans, per the listing. The narrow tabs go at the ends of the pan and the wider ones line the sides. King Arthur suggests greasing lightly before adding the dough, and says to cool the loaf slightly and release the edges before lifting it out.
The material is the same as King Arthur’s round lifter: silicone reinforced with natural glass fibers, sealed edges, rated to 500°F, and oven, microwave and dishwasher safe. The same care rules apply, too: plastic utensils only and no direct heat.
Why we like it
- Fits three common loaf pan sizes, per King Arthur.
- Rated to 500°F.
- Two lifters for two pans.
- Dishwasher safe.
Key specifications
| Model | 50612K |
|---|---|
| Type | Loaf pan liners, set of 2 |

| Material | Silicone with natural glass fibers |
| Max temperature | 500°F |
| Perforated | Not stated |
| Dishwasher safe | Yes, per listing |
| Made in | Not stated |
Why we recommend it
It suits bakers who make sourdough sandwich bread or enriched loaves in a pan and want them out cleanly every time.
Skip it if you only bake free-form loaves; it is made for loaf pans.
Pros and cons
Pros
- Fits common pan sizes
- High heat rating
- Set of two
Cons
- Loaf pans only
- Still needs light greasing
7. Norpro Silicone Pastry Mat – A Smaller Counter Mat with Measures

If the DANIA & DEAN mat is more than your counter can hold, Norpro’s mat is the smaller choice at 19.5 x 15.5 inches, per the listing. That is enough room to shape one loaf, divide a batch of rolls or roll out flour tortillas.
Norpro prints diameter circles and ruler measurements on the surface, which help when you pat a round to a set size or roll dough to a given width. The listing says the non-stick surface keeps dough from sticking, that the mat stays in place during use, that it rolls up for storage and that it is dishwasher safe.
Norpro does not give a temperature rating or say the mat can go in the oven, so treat it as a counter mat only.
Why we like it
- Printed circles and ruler measurements.
- Stays in place during use, per Norpro.
- Rolls up for storage.
- Dishwasher safe.
Key specifications

It suits bakers with a small counter who want a non-stick shaping surface with printed guides.
Skip it if you want one mat for both the counter and the oven; Norpro does not rate it for oven use.
Pros and cons
Pros
- Compact size
- Measurement guides
- Dishwasher safe
Cons
- No oven rating
- Room for one loaf at a time
How to choose a silicone mat for sourdough
Start with how you bake. If your loaves go into a Dutch oven, you need a sling or lifter, not a sheet-pan mat. If they go on a sheet pan or a stone, a perforated mat makes more sense. If you bake sandwich loaves, a loaf pan liner. Counter mats are for shaping, and they are optional.
Heat rating. Sourdough bakes hotter than cookies. Compare the rating on the listing with the highest temperature in your recipe, including the preheat of a Dutch oven. In this guide the stated ratings run from 450°F to 500°F, and two products give none. Never use a mat over a direct flame or under a broiler unless the maker says you can.
Perforated or solid. Demarle sells the Silpain as perforated for air circulation when baking bread. America’s Test Kitchen found that a perforated sourdough mat it reviewed left cosmetic marks on the bottom of loaves. Solid mats leave a smooth base.
Size and shape. Sheet-pan mats should match the pan: about 11 5/8 x 16 1/2 inches for a 13 x 18 half sheet. For slings, match round to round and oval to oval, and check the pot size the maker states.
Care. Most of these mats are dishwasher safe, according to their makers. Whatever the mat, cut and score bread off it, and use plastic or nylon tools on it; King Arthur asks for plastic utensils only on its lifters.

Using a silicone sling or mat with sourdough
For a Dutch oven bake, shape the loaf and proof it in a banneton or, with the King Arthur lifter, in the lifter itself inside the cold pot. When the dough is ready, turn it out onto the sling if it proofed in a basket, score it with a bread lame, and lower it into the preheated pot by the handles. Lid on, bake, then lift the loaf out by the same handles.
For a sheet-pan bake, lay the perforated mat on the pan, set the shaped loaves or rolls on it with room to spread, and score them there. The same method works for bolillos: divide, shape into small torpedoes, proof on the mat, score lengthwise and bake.
On the counter, a silicone mat needs little or no flour for kneading, but wet sourdough still sticks to anything. Wet your hands and a plastic scraper for folds, and dust the mat lightly only when you shape.

How we chose these seven mats and slings
We searched Amazon for perforated baking mats, bread slings, loaf pan liners and silicone pastry mats, and kept only products showing as in stock when we checked. We favored makers that publish clear specifications, such as Demarle, King Arthur Baking and Norpro, and added three Amazon-first brands where they offered something the established makers did not: two pot shapes in one pack, a pair of perforated mats, and a large counter mat. Every specification comes from the maker’s Amazon listing. For context we read America’s Test Kitchen’s October 2026 review of silicone baking mats and bread slings, and cite it by name. We have not used these mats for this guide.
We left out the Silpat, Mrs. Anderson’s, OXO, Fat Daddio’s, New Star, Nordic Ware and Wilton mats and the Silpat Roul’Pat because our main silicone baking mat guide reviews them. The Breadtopia Bread Sling, which America’s Test Kitchen recommends, did not turn up on Amazon. We also skipped a Calphalon mat rated only to 425°F, which is low for sourdough, and the many near-identical sling two-packs from sellers that publish few details.
Silicone mats and sourdough, answered
What is the best silicone baking mat for bread?
For loaves baked on a sheet pan, a perforated bread mat such as the Demarle Silpain. For loaves baked in a Dutch oven, a sling such as the King Arthur Round Loaf Lifter. For pan loaves, a loaf pan liner.
Can you bake sourdough on a silicone mat?
Yes, within the mat’s stated temperature limit. Check the rating against your recipe; the products here are rated between 450°F and 500°F where the maker gives a figure.
Is a bread sling better than parchment in a Dutch oven?
It is reusable, and America’s Test Kitchen notes a sling saves the time and waste of cutting parchment to size for each bake. Parchment still works and needs no washing.
Perforated or solid mat for sourdough?
Perforated mats are sold for air circulation under bread; solid mats leave a smoother base. America’s Test Kitchen reports that one perforated sourdough mat left cosmetic marks on the bottom of loaves.
Can I cut or score bread on a silicone mat?
Score gently and never cut through to the mat. King Arthur tells buyers to use only plastic utensils or cutters on its lifters, and Mrs. Anderson’s, among others, warns against knives on its mats.
Where to start for sourdough
Bake in a Dutch oven? Start with the King Arthur Round Loaf Lifter, or the KneadAce pair if you bake oval loaves. Bake on a sheet pan? Start with the Demarle Silpain, or the AMYONE pair for less. For all-purpose sheet-pan mats, see our main silicone baking mat guide, and for liners in general, our baking pan liners guide.
