An Ooni pizza oven is small, fast and hot, and the wood you feed it decides most of how it behaves. Ooni says its Karu ovens reach up to 950°F, and the flame that rolls over the dome is what cooks the top of the pizza in about a minute. Feed the tray damp, thick or oversized wood and you get smoke and a sulking fire instead.
The good news is that the rules are simple, and Ooni states them in its manual: dry, untreated hardwood, in pieces small enough for the tray. This guide compares the wood worth buying for Ooni ovens, from 5-inch oak splits for a Karu 12 to 6-inch boxes for a Karu 16 and pellets for the Fyra, using what each maker states and nothing more.

Quick verdict: which wood to buy for your Ooni
The best wood for an Ooni Karu 12 or Karu 2 is FiveOaks Firewood Kiln Dried Oak, 5 Inch: the splits are about 5 inches long, inside the 5.9-inch length Ooni’s manual allows, and the listing describes kiln-dried oak. For the lowest stated moisture, choose New England Cookwood Toasted Oak. For a Karu 16, choose Flamewood bark-free white oak, 6 inch, and for an Ooni Fyra pellet oven, Kona Pizza Blend pellets.
Below: the five standouts compared, all eight reviewed, and how to size wood for your oven.

What Ooni’s manual says about wood
Ooni’s manual for the Karu 12G, the oven now sold as the Karu 2, is specific. It says the fuel tray takes wood and charcoal, and that when cooking with wood you should use dry, non-treated hardwood in pieces up to 5.9 inches (15 cm) long and 1.5 inches (4 cm) in diameter. It says to add no more than 0.9 pound of fuel at a time and keep no more than 1.1 pounds in the tray at any time, and not to cook until the fuel has a coating of ash.
Three things follow. First, size: a box of 5-inch splits goes straight in, while 6-inch pieces sometimes need trimming and 8-inch pieces are for bigger fireboxes. Second, dryness: “dry” is why every log box on this list is kiln-dried, and why a stated moisture figure is worth having. Third, hardwood only: oak is the standard because it burns steadily and hot without a heavy smoke flavor. Softwoods, painted or treated timber and scrap lumber do not belong in a food oven; Ooni’s manual says non-treated hardwood.
The Karu 16 and Karu 2 Pro have larger trays; check your own manual for their figures. The Fyra burns hardwood pellets rather than logs, so it needs a different fuel altogether. If you also cook with charcoal, our guide to the best lump charcoal for pizza oven fires covers that side of the tray.

Our picks for the best wood for ooni pizza oven cooking
Eight choices: two 5-inch oak boxes for Karu 12 and Karu 2 trays, three 6-inch boxes for the Karu 16 and similar ovens, a kindling box, and two pellet options for Ooni’s pellet ovens. Each review says when a maker does not state a detail.
1. FiveOaks Firewood Kiln Dried Oak Pizza Oven Wood, 5 Inch – Short Oak Splits Sized for a Karu 12 Tray

Ooni’s manual for the Karu 12G, the oven now sold as the Karu 2, says to burn dry, untreated hardwood in pieces up to 5.9 inches long and 1.5 inches across. Five-inch splits fit that tray without trimming, which is why this box leads the list. FiveOaks says its tiny splits measure about 5 inches long and 0.5 to 2 inches wide, and names Ooni, Gozney Roccbox and Solo Stove pizza ovens as uses. Split the occasional thick piece to stay within Ooni’s width guidance.
The listing describes the wood as kiln-dried oak and says the lower moisture is what makes it light quickly and burn hot. FiveOaks says the timber comes from state-forester-managed land in northwest Pennsylvania and that its kilns run on recycled waste wood. The box holds about 14 pounds, or 1,000 cubic inches, hand-stacked to the brim.
That is a practical amount for a small oven that takes a handful of pieces at a time: enough for a good number of pizza nights without a mountain of wood to store.
Why we like it
- About 5 in long, inside the Karu 12G limit
- Kiln-dried oak, per the listing
- Stated Pennsylvania source
- Manageable 14 lb box
Key specifications
| Brand | FiveOaks Firewood (part TS-05) |
|---|---|
| Wood (stated) | Oak |
| Drying (stated) | Kiln-dried |
| Piece size (stated) | About 5 in long, 0.5-2 in wide |
| Amount | About 14 lb, 1,000 cu in |
| Origin (stated) | Northwest Pennsylvania, USA |
| Best for | Karu 12, Karu 2 and similar small trays |
Why we recommend it
Buy it if you own a Karu 12 or Karu 2 and want wood that goes straight from the box into the tray.
Skip it if you have a large wood-fired oven; 5-inch splits burn quickly in a big firebox.
Pros and cons
Pros
- Sized for small trays
- Source and drying stated
- Compact box
Cons
- Some pieces wider than 1.5 in
- Small pieces burn fast
2. New England Cookwood Toasted Oak 5 Inch Cooking Wood – Kiln-Dried, Then Toasted, Under 10 Percent Moisture

New England Cookwood gives the most precise figures of any wood here. The listing says pieces never exceed 5.25 inches long, with widths of 0.75 to 1.75 inches, and that the wood is delivered at less than 10 percent moisture content. The wood is red and white oak, kiln-dried and then “toasted”, which the maker says gives oak’s flavor and high heat value and an easy start.
Moisture matters more than species in a small oven. Wet wood smolders and smokes instead of flaming, and an Ooni needs a lively flame rolling over the dome to cook the top of a pizza. A stated moisture figure is something you can hold a maker to; most boxes only say “kiln-dried”.
The box is about 14 pounds, roughly 1,000 cubic inches. New England Cookwood also sells a half-size box of 8 to 9 pounds, and says it never uses plastic in its packaging.
Why we like it
- Stated under 10% moisture
- Stated maximum length, 5.25 in
- Red and white oak
- Plastic-free packaging, per the maker
Key specifications
| Brand | New England Cookwood (model NECW-5-TO) |
|---|---|
| Wood (stated) | Red and white oak |
| Drying (stated) | Kiln-dried, then toasted; under 10% moisture |
| Piece size (stated) | Up to 5.25 in long, 0.75-1.75 in wide |
| Amount | About 14 lb, ~1,000 cu in |
| Origin (stated) | New England |
| Best for | Karu 12, Karu 2, small smokers |
Why we recommend it
Choose it if you want stated numbers: piece length, width and moisture are all in the listing.
Skip it if you want a bigger supply; the 49-pound Cutting Edge box lasts much longer.
Pros and cons
Pros
- Most specific listing here
- Short pieces fit small trays
- Low stated moisture
Cons
- Widest pieces a little over 1.5 in
- Small box for frequent cooks
3. Old Potters Kiln Dried Pizza Oven Mini Logs, 6 Inch, Oak – USDA-Certified Kiln-Dried Oak, Made in the USA

Old Potters sells 6-inch oak mini logs in a box of about 12 pounds, or 790 cubic inches. The listing says each piece measures about 6 inches by 1 to 1.5 inches, and that the wood is USDA-certified kiln-dried and made in the USA. The same maker sells cherry and hickory; this listing is oak.
Six inches is a touch longer than the 5.9 inches Ooni’s Karu 12G manual allows, so in a Karu 12 or Karu 2 you may need to trim the odd piece or lay it in at an angle. Ovens with bigger trays, such as the Karu 16, take longer pieces; check your manual for its figure.
The listing names Solo Stove’s Mesa XL tabletop fire pit as well as pizza ovens, grills and smokers. The box is small, which suits an occasional pizza night.
Why we like it
- Oak, USDA-certified kiln-dried, per the listing
- 1 to 1.5 in thick, inside Ooni’s width guidance
- Made in the USA
- Small, storable box
Key specifications
| Brand | Old Potters |
|---|---|
| Wood (stated) | Oak |
| Drying (stated) | USDA-certified kiln-dried |
| Piece size (stated) | About 6 x 1-1.5 in |
| Amount | About 12 lb, 790 cu in |
| Origin (stated) | USA |
| Best for | Karu 16 and 6-inch fireboxes; trim for Karu 12 |
Why we recommend it
It suits occasional cooks with a Karu 16 or a similar oven who want a modest box of oak.
Skip it if you own a Karu 12 and don’t want to trim pieces; the 5-inch boxes above fit as they come.
Pros and cons
Pros
- Thickness suits Ooni trays
- Certified kiln-dried
- Small box
Cons
- 6 in is slightly long for Karu 12
- Smallest box here

4. Cutting Edge Firewood 6 Inch Mini Pizza Oven Wood, 50 lb Box – A Big Box of Mini Oak Logs for Frequent Cooks

Cutting Edge Firewood sells several pizza-wood sizes; this is its 6-inch miniature oak, in a box of about 49 pounds. The listing says that is enough to cook 100 or more pizzas, and describes the wood as ultra kiln-dried, sustainably sourced oak. It suggests the mini cuts for portable pizza ovens and as starter kindling for larger wood-fired ovens.
On its own site, Cutting Edge recommends its 8-inch mid-size wood for the Karu 16, so treat this 6-inch box as the choice for smaller portable ovens and for kindling. In a Karu 12 or Karu 2, 6 inches is slightly over Ooni’s 5.9-inch guidance, so expect to trim some pieces.
A 49-pound box is a lot of wood. Keep it somewhere dry and off the ground; kiln-dried wood can pick up moisture again if it sits in a damp garage.
Why we like it
- Largest supply on this list
- Ultra kiln-dried oak, per the listing
- Works as kindling for bigger ovens
- Stated estimate of 100+ pizzas
Key specifications
| Brand | Cutting Edge Firewood (model BMPZL) |
|---|---|
| Wood (stated) | Oak |
| Drying (stated) | Ultra kiln-dried |
| Piece size (stated) | 6 in mini cuts |
| Amount | About 49 lb |
| Origin (stated) | Not stated in listing |
| Best for | Frequent cooks, portable ovens, kindling |
Why we recommend it
Buy it if you fire the oven every week and would rather order wood once a season.
Skip it if you have little dry storage, or cook only a few times a year.
Pros and cons
Pros
- Big supply
- Mini size lights easily
- Doubles as kindling
Cons
- Heavy box to store
- Thickness not stated
5. Flamewood Premium White Oak Pizza Oven Wood, 6 Inch, 14 lb – Bark-Free White Oak Splits

Flamewood’s box is about 14 pounds of white oak, split into 70 to 80 pieces of about 6 inches long and 0.5 to 1.5 inches thick. The listing says the wood is kiln-dried and bark-free, and names Ooni and Gozney ovens, Solo Stove fire pits, grilling and smoking.
Bark-free wood is a small but real convenience in a pizza oven. Bark flakes off as debris, and with a tray as small as an Ooni’s, cleaner splits mean less to clear out. The thickness range sits within the 1.5 inches Ooni’s Karu 12G manual allows; the length, as with every 6-inch box, is slightly over its 5.9-inch figure.
Flamewood describes white oak’s flavor as mild, nutty and slightly sweet. That is the maker’s description; oak is the standard pizza wood because it burns steadily without a strong smoke flavor.
Why we like it
- Single named species: white oak
- Bark-free, per the listing
- 0.5-1.5 in thick
- About 70-80 pieces per box
Key specifications
| Brand | Flamewood LLC |
|---|---|
| Wood (stated) | White oak |
| Drying (stated) | Kiln-dried |
| Piece size (stated) | About 6 in long, 0.5-1.5 in thick |
| Amount | About 14 lb, 70-80 splits |
| Origin (stated) | Not stated |
| Best for | Karu 16, 6-inch fireboxes |
Why we recommend it
It suits cooks who want one named species and clean, bark-free splits in a mid-size box.
Skip it if origin matters to you; the listing does not say where the wood is from.
Pros and cons
Pros
- White oak named
- No bark
- Thin splits catch fast
Cons
- Origin not stated
- Slightly long for Karu 12

6. Heatcraft Premium Kiln Dried Wood Kindling – Uniform Sawn Sticks for Starting the Fire

Getting a small oven going is easier with thin, dry wood under the first splits. Heatcraft’s kindling is sawn from hardwood lumber rather than split from logs, so each stick is a uniform rectangle of about 6 x 1 x 1 inches. The listing says the wood is dried in a heated lumber kiln to 6 to 8 percent moisture and contains no chemicals, and that it is sourced from Appalachian hardwoods.
Heatcraft offers hickory and oak in its range and recommends oak for pizza ovens. This listing does not state which species it ships, so check the variation you select before ordering.
One-inch-square sticks sit comfortably inside Ooni’s 1.5-inch width guidance, and the 6-inch length is close to the Karu 12G’s 5.9-inch figure. Lay a few under your first pieces of oak; Ooni’s manual rules out spirit or petrol for lighting, so use a firelighter instead.
Why we like it
- Stated 6-8% moisture
- Uniform 6 x 1 x 1 in sticks
- No bark, no chemicals, per the listing
- US-sourced hardwood
Key specifications
| Brand | Heatcraft (model HCK-201) |
|---|---|
| Wood (stated) | Hardwood; oak or hickory variations |
| Drying (stated) | Kiln-dried to 6-8% moisture |
| Piece size (stated) | About 6 x 1 x 1 in |
| Amount | About 70 pieces |
| Origin (stated) | Appalachian hardwoods, USA |
| Best for | Starting the fire in any small oven |
Why we recommend it
Choose it if lighting the oven is the part you dread. Uniform dry sticks catch quickly under your first splits.
Skip it as your main fuel; it is kindling, and you will burn through it fast.
Pros and cons
Pros
- Lowest stated moisture here
- Uniform size
- Easy to light
Cons
- Species depends on variation
- Kindling only
7. Kona Wood Pellets Pizza Blend, 2 lb – Pellets Sold for Ooni Pellet Ovens

Not every Ooni burns logs. The Fyra 12 and older Ooni pellet ovens burn hardwood pellets from a hopper, and Kona sells this blend for them: the title says it is intended for Ooni and Big Horn pellet pizza ovens. The listing describes 100% natural hardwood pellets and a rich, smoky flavor.
Kona does not name the woods in this blend. Its separate Apple & Oak pizza blend, sold for Ninja’s Woodfire grills, does name them; this one does not. The bag is 2 pounds and reseals, which matters with pellets: they swell and crumble when they get damp, and crumbled pellets feed poorly.
Two pounds is a small bag. It is a sensible way to try a pizza-specific blend; for regular cooking, a bigger bag of plain oak pellets, like the Bear Mountain below, means fewer reorders.
Why we like it
- Sold specifically for Ooni pellet ovens
- 100% natural hardwood, per the listing
- Resealable bag
- Small size to try
Key specifications
| Brand | Kona (model KONA-PIZZA-OONI-SOLO-BH) |
|---|---|
| Wood (stated) | Hardwood blend; species not named |
| Drying (stated) | Not stated |
| Form | Pellets |
| Amount | 2 lb, resealable |
| Origin (stated) | Not stated |
| Best for | Ooni Fyra and Big Horn pellet ovens |
Why we recommend it
Buy it if you cook on an Ooni Fyra or another pellet oven and want a blend made for pizza.
Skip it if you burn logs; pellets are for pellet ovens only.
Pros and cons
Pros
- Made for pellet pizza ovens
- Resealable
- Easy to store
Cons
- Woods not named
- Small bag
8. Bear Mountain Oak Wood Pellets, 40 lb – A Big Bag of Plain Oak Pellets

Bear Mountain makes pellets for pellet grills and smokers, and its oak pellets are a straightforward fuel for an Ooni pellet oven. The listing describes pure 100% hardwood made from all-natural hardwood sawdust, with no fillers, oils or additives, and low moisture content for consistent smoke. The wood is oak alone.
Bear Mountain lists the pellets for pellet grills and smokers, as well as gas, charcoal and electric grills, and does not mention pizza ovens. They are a match for the Ooni Fyra’s hopper because they are plain hardwood pellets, but the maker does not make that claim, so check your oven’s manual for any pellet guidance before switching.
Forty pounds is a big bag for a small pizza oven. Store the pellets in a sealed bin, off the ground and dry.
Why we like it
- Single wood: oak
- No fillers, oils or additives, per the listing
- Large supply
- Plain hardwood, one species
Key specifications
| Brand | Bear Mountain Premium BBQ Woods (model FB18) |
|---|---|
| Wood (stated) | Oak |
| Drying (stated) | Low moisture; kiln-drying not stated |
| Form | Pellets |
| Amount | 40 lb bag |
| Origin (stated) | Not stated |
| Best for | Ooni Fyra owners who cook often; pellet grills |
Why we recommend it
It suits Fyra owners who cook often and also run a pellet grill.
Skip it if you cook pizza only now and then; 40 pounds is a lot to keep dry, and the maker does not list pizza ovens.
Pros and cons
Pros
- Plain oak, no additives
- Big bag
- Works in pellet grills too
Cons
- Pizza ovens not named by maker
- Needs dry storage
How to choose wood for an Ooni
In a restaurant, fuel is bought like any ingredient: consistent, dry and right for the equipment. Five checks will get you the right box.
1. Match the length to your oven
For a Karu 12 or Karu 2, Ooni’s manual gives 5.9 inches as the maximum length, so 5-inch boxes like FiveOaks and New England Cookwood fit as delivered. Six-inch boxes (Old Potters, Cutting Edge, Flamewood) need the odd piece trimmed. Bigger trays such as the Karu 16’s take these 6-inch pieces, and Cutting Edge recommends 8-inch wood for the Karu 16 on its own site; confirm the length in your manual.
2. Keep pieces thin
Ooni gives 1.5 inches as the maximum diameter. Thin pieces catch fast and flame well, which is what a small oven wants. Split anything thicker with a hatchet before it goes in the tray.
3. Dry wood only, and look for a number
Every log box here is labeled kiln-dried. New England Cookwood states under 10 percent moisture and Heatcraft 6 to 8 percent; the others say kiln-dried without a figure. Old Potters states USDA certification for its kiln drying. Even kiln-dried wood can take on moisture again, so store it dry.
4. Pick the species
Oak is the default for pizza: it burns hot and steady with a mild flavor. Fruitwoods and hickory add more smoke character, which some cooks like for meats and vegetables. All eight picks here are oak or hardwood blends; the Kona blend does not name its woods.
5. Buy an amount you will burn
A small Ooni uses wood a handful at a time. A 14-pound box suits most households; the 49-pound Cutting Edge box suits people who cook every week. For pellets, a sealed bin keeps a big bag in good shape.

Lighting and running wood safely
Your oven’s manual comes first. These points are from Ooni’s Karu 12G manual:
- Use the oven outdoors only. Ooni says not to use it in a confined or habitable space such as a house, tent, caravan, motor home or boat, because of the danger of fatal carbon monoxide poisoning.
- Do not use spirit or petrol to light or relight the oven.
- Add no more than 0.9 pound of fuel at a time, and keep no more than 1.1 pounds in the tray.
- Before first use, heat the oven with the fuel kept red hot for at least 30 minutes.
- When you finish, let the fire burn down naturally, and do not remove the ashes until the oven has cooled completely.
A long-handled peel and heat-resistant gloves make tending the fire easier; our guide to the best pizza oven peel compares turning and launching peels, and an infrared thermometer tells you when the stone is ready.
How we chose these eight
We started where a kitchen starts with any fuel: dry, consistent and suited to the equipment. We read Ooni’s Karu 12G manual for its wood rules and Ooni’s product pages for the Karu range, then searched Amazon in the United States for cooking wood and pellets from makers that describe their product, checked every item’s stock with Amazon’s product data, and took the details from each brand’s listing. Cutting Edge’s guidance on sizes for the Karu 16 comes from its own site. We did not find Ooni’s own oak logs or pellets on Amazon in our searches, so they are not reviewed. We left out unbranded boxes and wood down to its last few units. We have not used these woods for this guide, and we did not rely on any review site’s rankings.
Ooni wood questions, answered
What size wood fits an Ooni Karu 12?
Ooni’s Karu 12G manual says pieces up to 5.9 inches long and 1.5 inches in diameter. Five-inch splits fit as they come; 6-inch pieces need the odd trim.
Do I need kiln-dried wood?
You need dry wood; Ooni’s manual says dry, non-treated hardwood. Kiln-dried wood is the easy way to get it, because the drying is controlled. Seasoned wood that is truly dry also works, but it is hard to judge without a moisture meter.
Can I use pellets in a Karu?
The Karu’s tray is made for wood and charcoal. Pellets are the fuel for Ooni’s pellet ovens, such as the Fyra 12, which feed them from a hopper.
Can I mix wood and charcoal?
Ooni’s manual says the Karu tray takes both. Many cooks start a bed of lump charcoal and add small pieces of wood for flame; see our guide to lump charcoal for pizza ovens.
Which wood is best for flavor?
Oak is the neutral, reliable choice for pizza. Pecan, hickory and fruitwoods add more smoke, which suits meats and vegetables; Old Potters sells cherry and hickory alongside its oak. For smoking wood generally, see our guide to smoker wood chips.
Our choice for an Ooni pizza night
For a Karu 12 or Karu 2, buy FiveOaks 5-inch kiln-dried oak; it fits the tray as it comes. If you want stated moisture and dimensions, New England Cookwood’s toasted oak is the most specific listing here. Karu 16 owners should look at Flamewood’s bark-free 6-inch white oak, and Fyra owners at Kona’s pizza pellets. Still choosing an oven? Our guide to the best pizza oven covers the Karu 2 alongside gas models.
And if you would rather someone else stoked the fire tonight, see the menu or call to order.
